Lobster tail....
Just a quickie - I have taken a lobster tail I cooked a couple of years ago out of the freezer destined for a risotto tonight & suddenly am worrying if it will be okay - I know there's only one way to find out - but would rather not find out the hard way after everything else......what think you?

I wouldn’t but I’m a bit of a wuss. I think fish in the freezer loses its flavour faster than other things. Two years is a long time.

The texture may be dodgy, it might have "freezer burn" but bacteria won't have grown unless it has thawed at some point

I took an uncooked lobster tail from my freezer at the beginning of this week. It was also a couple of years old. It was absolutely fine.
And it was for a risotto!
And it was for a risotto!

I can't imagine it'll be that great, in terms of texture and lack of flavour, but I'd not worry about getting Ill from it.
I eat all kinds of things out of date though and obviously haven't died yet!

Mine didn't have any texture or lack of flavour problems - but it was sealed commercially and there wasn't any air in it at all - it was actually quite hard to get the covering off it.

Well, I'm still here safe & sound!
I wasn't expecting much - the texture had softened a bit, it wasn't so firm - but the taste wasn't affected at all - lovely - & not what I was expecting, I'd pulled some large prawns out of the freezer just in case!
I had frozen the tail completely in its shell which was very thick - I had to use the poultry shears on it, so that could have made a difference.

I don't usually freeze cooked shellfish but as it's often sold already cooked not surprised to hear that it was ok! I do save and freeze prawn and lobster (when I have them) shells for stock and cioppino. You get to savour the flavour twice I don't think safety is any more of an issue after freezing than other food.
