Chocolate fudge icing recipe?

Postby slimpersoninside » Thu Jan 13, 2022 2:03 pm

Having found my go to chocolate cake I now need to find my go to chocolate fudge icing.

Does anyone have a version they would be willing to share please?

Thank you.

I use this one from Mary Berry. If it's used as soon as it's made it should set to a shiny glaze, but I usually let it cool, then whisk some air in, which makes it bulkier and fudge-ier.

Melt 180g dark chocolate with 60g butter then beat in 2 tablespoons golden syrup and 3 tablespoons milk.

A half quantity is enough to top a 7 or 8" cake.

Cheers Sue, I'll give it ago :thumbsup .

KC2, it's a Michael Barry one that just fits my idea of the right choc cake. I like chocolatey but spongy, too many with the taste are too dense for my liking.

This one, I expect. I like this too, if I need a light-ish sponge. It's certainly miles better than a Victoria Sandwich with just a little cocoa added:
