Baklava Recipe?

Anyone have a T&T recipe you can recommend please?

I do like a good Baklava but cannot buy them locally, so making my own it will have to be.

Lots of recipes out there but, as always, a T&T is preferable to picking one and taking a punt.

Sorry I cannot help with a recipe as very few people in Cyprus make their own as it is best made in large quantities
I told that you should use the best quality butter, lots of nuts and flavour the syrup with either rose flower water or orange blossom water.

I used to make one from a Sainsbury’s magazine but that was years ago. I’ll check the files next time I’m allowed access to the PC to see if I saved it. Someone did one in The Guardian recently. I’ll see if I can find that too.

I have used Claudia Roden’s recipe from Middle Eastern Food which Felicity mentions

I’m with Felicity, it’s not at all difficult if you are systematic and don’t rush. Also always use chilled and not frozen filo if possible, it’s generally much easier to handle though it varies a bit with brand

My favourite is pistachio, walnut can be slightly too bitter for my taste; having said which I noticed today that Holland and Barrett have nice looking walnuts on offer, and they are light skinned which in my experience aren’t usually bitter

I used this one when we catered for DS1's engagement party. https://www.mygreekdish.com/recipe/bakl ... chio-cake/ it makes a large trayful but easy to half the quantity. It got the :thumbsup from the Greek contingent. Make sure to use a well buttered non-stick tray or it can be hard to get it out.
ETA - I used a mix of walnuts & pistachios

Richard Burr’s version looks good and makes a smaller amount than most

As it’s his it probably works too

i think the first (and best) one i have made, years ago, was the madhur jaffrey one from the eastern veg cookbook.
