Cucumber relish recipe

Can someone point me in the right direction? I thought I had it but can't find it? Suff I think you might know the answer to this one, or maybe Scully?

I have 3 cucs that need using today.

I have a recipe for 'bread & butter' pickle that uses cucumber if that's any help ... I love it :yum

sweet cucumber pickle (relish type)

2lb cucumber
1 large green pepper (i use red cos it looks prettier!)
2 large onions
2 oz salt

½ pt cider or wine vinegar
8 oz soft brown sugar
½ tsp ground turmeric
¼ tsp ground cloves
½ tsp celery seeds
1 dsp mustard seeds


Wash cucumber but do not peel.
Peel onions.
De-seed pepper.

Thinly slice all prepared vegetables and place in a large bowl.
Add salt and mix well.
Cover and leave to stand for at least 3 hours.
Rinse vegetables well, in a colander, under running, cold water.
Squeeze out as much liquid as possible.

Place in a large pan, add vinegar (I usually use ordinary white distilled vinegar) and bring to the boil.
Simmer until vegetables are soft, about 20 mins (well, I found it a bit longer).

Add sugar and spices to the pan, stir to dissolve and boil for a further 10 mins.

Pour hot pickle into hot, sterilized jars and cap immediately with sterilized lids.

Thanks Scully that's the one ! Think I asked this Q. B4, mine are ridge cucs. should I still not peel them?

ha! maybe i should get a cut - which i would then pass on a portion to the person who gave me the original recipe...

as it's been passed on and on it could well work out as just a sniff of the purse to whoever was the originator!

It's very much a 'bread and butter' pickle recipe like the one I used to make. The celery seeds make it!

no, i've looked at a load of 'bread and butter pickle' recipes and they look more like sliced pickled cucumbers. this makes a syrupy sort of relish that goes well in burgers etc.
the cucumber is cooked and limp, not crunchy.

trawling the web i've found a recipe that is very similar but using courgettes so i assume the cucumber recipe could also be used for courgettes - it could be a good use for those with a seasonal glut!

I usually think of cucumber relish as American-style green-coloured pickle relish - thickish and chutney-like in which the cucumbers are minced or blitzed - commonly slathered on hot dogs along with mustard but really versatile as an addition to sauces, dressings, meatloaves etc etc.

I like to ferment the cucumber in salt brine for several days until sour - salt 'pickling' - adds an extra flavour depth to the cucumber and from there blitz and cook with peppers, sugar, vinegar and spices until thick. Keeps well, too.
