This puzzles me. Wouldn't you just spread normal salted butter on your crumpet/toast whatever, and then top with your favoured brand of honey? At £10 a jar (inc. shipping) it's not cheap and something you can recreate easily at home surely?

I must admit I'm out of the loop, PP. I used to do lots of shows with HM.
When we next go to Anglesey, as might try and get a jar, but knowing Alison, it will be delicious, well balanced and aimed at boosting their great taste haul.

Reading between the lines, it sounds as though the ingredients have been slightly caramelised. In the which case, it would be more than just butter and honey and take on a nice toffee flavour - good for cake fillings and more as well as on toast. Still expensive but a treat some would be willing to pay for.

I think they say "the new salted caramel" meaning the new fad, rather than it contains caramel
Ingredients: Honey (87%), butter (milk) (11%), Halen Môn Pure Sea Salt PDO (2%), stabiliser: xanthan gum.

I realise it isn't being marketed as salted caramel but just felt by the hype and appearance it might be more than just honey stirred into butter and a slight caramelisation would be very nice. Just hopeful.

Whilst never knowingly tried this, our friends live on Anglesey and send us one of HM hampers every Christmas. Without exception, every item is delicious so I would have high hopes for this. Although I’m not a real lover of honey.

but the other ingredients add up to 100%.
they should have maybe said 'plus xanthan gum'?
glaze recipes are often given as parts per 100 excluding colouring oxides, with those added on as 'plus however many grammes of whatever'

Because I looked at the link it has now popped up on my Facebook page . Hadn't noticed before, it has to be consumed within a week of being opened.

My guess would be that it probably takes less than 1% gum to stabilise and the other ingredients are rounded to the nearest percent.

I wonder where they get the honey on sufficient quantities to make it a viable year round product. Bet it's not local, knowing Anglesey, which is only small. Plus, why adulterate pure local honey like that?
