It was absolutely fabulous Zerocook ... I didn't fillet and roll the skate (well ray really) ... too much faff and we're greedy and wanted to eat all the flesh, not save any for something else, but it would obviously be better suited for restaurant dining if it were filleted and rolled etc ... I poached the wings gently for a few minutes and then it had just a few minutes pan frying in a little butter to give it a better appearance. The mix of veg, and the dressing on the letils etc were just perfect. Really good and we'll do it again. :thumbsup
