Filo Chicken & Leek Pie ... top or top and bottom?

I've made a pie filling with leeks, leftover roast chicken and a well flavoured bechamel ... and I've taken a pack of filo out of the freezer ... I was going to use the filo top and bottom, like a spanakopita, but when I googled to check oven timings I discovered that all the chicken and leek pies with filo I could find just have pastry on the top.

We don't have potatoes when we have pastry, so we're not overly concerned about carbs from the pastry so ............ which shall I do?

I have had similar pies in Cyprus and Turkey, they had filo on the base. The dish was lined with filo, then filled and the remaining filo was pulled over the top. Any remaining filo leaves ate put on the top too.

It was delicious ... I served us a quarter each, but Hollow Legs had second helpings :shock: so there’s not enough left for supper tonight ... we’ll have the remainder for lunch and pasta puttanesca for supper.
