A sauce for ravioli

I’ve just been to Booths and bought some very nice looking crab and crayfish ravioli. But my brain fog is preventing me from choosing what sauce (if any) I should serve with it. Has anyone got any exciting or soothing ideas please? Thank you.

Yum Cherrytree! :yum

Would be nice with a classic bisque sauce I think, perhaps with the addition of a little tarragon.

It sounds delicious.
I think I'd do a white wine, cream and chive sauce.

I think I'd just drizzle over a little melted butter, with maybe a pinch of pepper.

I´d want something slightly acidic to go with that. Brown butter and capers; lemon cream; maybe a white wine reduction with cream and dill. Although I did once have a glorious sauce for fish in Italy, which was diced, de-seeded tomatoes, garlic, white wine, lemon juice and capers.

If coconut milk/cream is liked, perhaps a simple sauce made like the one below, or with lime or lemon juice and fresh ginger, or spring onions.

I make this sort of sauce, quite thin, for ravioli with a tiny spot of chipotle paste.

Sounds lovely, I’ll look out for that in Booths.

I’d go with Seatallans suggestion!

Or some cherry tomatoes cooked down with a little butter and white wine.

Thank you for all your help. In the end I made a white wine and cream sauce. The bisque one sounded delicious but I hadn’t got the necessary ingredients.
My next fishy quest by the way is when the scallop boat docks at Maryport. I’ve ordered 15 for £15 which sounds quite good.

There are two fishing boats that say when they are going out

Silver Fern
Cheralis fresh fish.
I’m still waiting for Cheralis to come on as I’ve ordered the scallops
