Re: Risotto
I have smoked haddock.
Might have to give this one a go.

Re: Risotto
Thanks for the link Lokelani. I've been looking for a way of using some risotto rice and so thought I'd buy smoked haddock and creme fraiche and try it tomorrow.
Got home from school with 5 yr old GD and the shopping and she saw the haddock. She went into raptures and said it was one of her favourite foods (who knew?). Thus we made the dish tonight but with peas instead of spinach and creme fraiche for me only. It's the first time I've seen her have seconds of a first course and is firmly in our repertoire now. A recipe which really works and will be nice cold too. Looking forward to trying it with spinach. I thought the creme fraiche gave enough acidity without lemon juice.
I think it would work with things like prawns added too - food for thought!

Re: Risotto
Glad it went down well with GD.
I didn't have spinach & used chopped spring greens instead, again very good. I might try a bit of white wine in it next time, as there's just us two adults here.
