The addition of red peppers would definitely kill the recipe for me, and the lack of shrimp paste or fish sauce would undoubtedly change the flavour profile. I´d also take issue with a "pinch" of salt for 800 gms of chicken.

it says consume within 21 days of opening but it seems to last quite a while longer than that - it's been in the fridge a couple of months and tastes ok (i've just tried it).

When you do see fresh lemon grass it freezes well, and I think I have seen chopped frozen in little foil sachets in ordinary supermarkets

it roots quite easily if you're not going to use all of the stalks you get in a packet straight away - and you don't have a cat with exotic tastes.

Is fresh lemon grass seasonal, in UK shops that is?

I've seen it more than once in a local shop but after a year of lockdown and not getting out I've no idea when.

I think it normally comes in all the year round, mainly from Thailand, but anything that's flown in is scarce at the moment

Yes.lemongrass is seasonal.
It grows 365 days a year: a herb for all seasons. :lol:

I´ve got two "clumps" of it in the garden. I say "clumps" because it grows like those "everlasting" spring onions. One plant engenders another, which engenders another, and before you know it, there are loads of them.
