Mercy buckets KDKA. Will have a look around at Chundoo. Is that the grated one?

Err I’d already edited to point this out when you posted?scullion wrote:Stokey Sue wrote:I just searched for Pan Yan pickle recipe online, as I remember someone recreating it a few years ago, but she hasn't posted her full recipe I don't think, (someone might check on the link below - I always like Pan Yan and interestingly, no alliums, it was cut small, like Branston small chunk/sandwich version
Ingredients
Rutabagar (swede), sugar, apples, carrots, vinegar, thickener (modified starch) gerkins, acetic acid, peppers, onions, spices, colour (caramel), flavourings.
i think you may have missed that onion!

Yep - that´s the one. Grated green mango and loooooots of flavour!
Re: Piccalilli & Branston Pickle recipe?
I'm going to give that a try, it looks terrific, KDKA. I haven't got access to fresh mango but I have frozen, diced mango. If I let it defrost first, I think it will probably be fine?

Frozen, diced mango is perfect for the first recipe. In fact, that´s what I do when the tree produces too much - dice and freeze!
However, for the Chundoo, you definitely need green mango. It doesn´t work any other way.

Brilliant, I was only thinking of doing the first one anyway
Would you defrost it first or use it frozen?

Since it´s going to be cooked anyway, I don´t think it will matter too much. I´d defrost it, but seriously, I don´t think it will make much difference.
