This is the recipe I used - I recognise the pictures now; I wasn't particularly looking for a vegan recipe, but prefer gnocchi without egg

She says to just mash but I think I might have put the veg through the mouli-legumes as I have one, and it meant I didn't have to bother about carefully removing the skin first

I was just sent a link from Bon Appetit magazine and I thought I´d post it here, rather than on another thread.

The editors found they had over 430 pasta recipes, and chose these as the best.
I loved the idea of the red pesto pasta, and the recipe with anchovies, garlic and fennel!

Alla Vodka always reminds me of when I lived in Lausanne.
Cheap eats were hard to come by in Switzerland, save the local restaurant l'Avenir, which is still there.
The spaghetti alla vodka was sometimes heavily fuelled with alcohol - hic!

Plus the menu warned not to have coca cola with the fondue.

Thanks for that KDKA - really good looking collection of dishes there.
I was just looking at my ravioli form last night and thinking must do some handmade pasta soon - it's been a while. Some gnocchi too.

The red pesto pasta recipe does looks good. The mushroom and prosciutto looks good too. Not surprised they had a hard time choosing the list! Most of my pasta dishes are built on what's in the fridge or pantry at the time. I have a large bunch of cavolo nero and a bunch of curly kale to use. I can never resist :D Kale pesto might be good.

I've never understood the vodka pasta combo. Never tried it either so maybe I'm missing something :lol:

We're having veggie ricotta lasagna tonight - taken from the big freezer batch I made recently. It's a zero cooking night yay :D

I really should try pasta alla vodka, there’s been a litre and a half of vodka hanging round for some years now as I don’t drink it

My understanding is that the vodka enhances the flavour and impact of the tomato sauce

Possibly due to getting tipsy :lol: But seriously, do tell if you do :D

Might look for kale/spinach ravioli ideas tonight. River Cafe pasta book has a lot of good veggie fillings and sauces. But do I feel like a making a faff :?: ... :lol:
