ginger biscuits

Tony wants 'em.
Anyone have a recipe; I know I've made them in the past, but am looking for a new recipe.
Using fresh ginger or dried.

I do like the big ones, that crack a bit in the coffee stores. Rather than the hard gingernuts stylee.

No help as I lost the one I had, which was described as stem ginger cookies, US recipe off the internet, which might be the sort you're looking for.

I've just come across a Cornish Fairings recipe (vegan which I don't require).

These are very good - you can use wholemeal or rye flour instead of chestnut. IMO chestnut flour doesn't add much to the party, especially if there are strong flavours such as ginger around.

I shall try that goodfood recipe first, Suelle. It looks the easiest one for me to manage.

I made ginger biscuits this week ... I googled and found a couple, so I compared their ingredients and chose the one that used golden syrup as I had already bought that and with a couple of amendments:

100g butter; 75g brown sugar; 1 tablespoon chopped crystalised ginger (my sub for fresh ginger); 100g golden syrup ........ melt all these together and cool, then add 1 egg yolk and stir in.
250g SR flour; 1 tspn Bicarb; 2 tspn ground ginger (recipe said 1 tspn)... sieved together and added to the wet ingredients.
form into 20g balls, space onto a couple of baking trays, flatten slightly, then bake at 170c for 8-10 minutes. Allow space as they spread.

Just made a batch of the Cornish Fairings. Slightly bodged from the recipe. I used real butter, not vegan and I had to use a bit of maple syrup as i ran out of golden syrup. And I added a little bit of mixed peel I wanted to use up. If I do them again, I would drop the quantity of ginger slightly. It was a bit harsh. But nice enough overall, and they looked like the ones I used to buy in Cornwall! :)

the furnis's bakery used to be behind a vegetarian restaurant and whole food shop i worked in for a while. when they were baking fairings the glorious smell would waft over most of the shopping area of truro - you'd often see people walking around town with their noses in the air and a smile on their faces.

i came across a recipe a while back that asked for it, too, so looked it up - i think this explains it better than i can. it's an alternative to baking powder that gives a crisper finish - but it's a lot smellier while you're using it!

i remember well, the bottle that used to be in the cupboard when i was little. it was used as a stealth weapon in fights with my brother.

Tee hee. I once kept a little bottle of smelling salts on my bedside table to see if it helped me stay awake after the alarm went off at what seemed like an ungodly hour. It didn't, by the way.

Snagging, as Mr 0 likes a ginger biscuit. I bought a fresh batch of ground ginger a few weeks ago and thoughts vaguely turned to cookies. I will be using butter tho. Stopped using marg eons ago. And wholemeal flour. I actually have a gingersnaps recipe somewhere- must dig it out and compare. Posted ones here look good.

Do you find a noticeable difference using ammonia powder, Scullion?

I've always like Delia Smith's gingernut biscuits, but also found this on her website - untested by me, so far, but I like the idea of adding oats:
