A couple of weeks back I bought some lovely shrimp from a local supplier, for a lunch I had to make.
And ever since then, my wife has been saying: " We should make a "Chupe".
What´s a "chupe"? It´s a cross between a soup and a casserole, I suppose, packed with protein and veg.
THIS one is with shrimp. The stock is made with the shrimp carcasses ( including the heads), a bit of onion and some aromatics. The stock is then strained.
A mirepoix with onion, carrots and celery follows, then red peppers, cubed potatoes and sweet chile peppers are added. Once the potatoes are cooked, the shrimp go in. Just before serving, you add cubes of white cheese, avocado and plenty of coriander leaf. Served with my trademark "C4" hot sauce and some garlic bread.

Me either, but looking at them online I saw them in the market in Cork, where all the prepared chicken looks wonderful, and thought they were a great idea

That looks really nice KKA. I really like those hearty soup/stews . Good way to pack in loads of veg and flavour but they tend to be quite easy to digest

Really enjoying your local and regionl cuisine posts, KDKA. The Chupe looks great. I'm going to get into more Latin cooking I've decided. I think Mr0 would like a lot.

I was looking at arepas after I watched the Hallecas videos - Antonia Lopez had three SF restaurants specialising in corn cuisine - especially arepas - that unfortunately have closed. Thinking I might have a go, but difficult to get hold of masarepa flour - do you think masa harina would work? I was looking at pupusas from Salvador region which seem quite similar but use masa harina. Only difference is that masa harina has been nixtalalised.

Maybe time to start a Latin regional cooking thread.

Where do you live in the US? Texas?
I´m pretty sure you can find some harina PAN somewhere, because the company that makes it (POLAR) has opened a factory somewhere down there.
Masa Harina will work, but the flavour is never the same, since the corn has been "nixtmalizado". Pupusas, from El Salvador, are the closest thing to arepas.

I love that chupe. I have made some of your Venezuelan dishes previously, Clive. But not nearly enough.

I'd like a Latin thread too as I'm not keen on wheat flour so corn flour cooking items and tips would be most welcome. Is it presumptuous though to assume that karadekoolaid and knowledgeable others would be happy to be effectively on the receiving end? Clearly no obligation on knowledgeable gurus to feel obliged of course.

The turkey cushion was delicious, with lots of juice that turned to jelly when cold. OH used some for the B&S we had Saturday.

Weight was 1.8k, cost £6.99. Didn’t believe that so have just checked my credit card account to confirm.

Funny enough we don’t care for their chicken cushions normally.

Greendale, AmyW territory, sell online, £21 but I assume that’s for a whole chicken.

Gosh, that looks good, and what an amazing bargain! I paid £30 for my Waitrose 1.4 kg boneless turkey roast with 1 dozen stuffing balls.

Nixt - tmali in Nahuatl: lime ash + corn kernels. ( think - tamales??)
The corn is cooked in water and lime (calcium hydroxide), which removes the elements in the corn shell and makes it more digestible. Probably originated in Meso-America, hundreds of years ago.
Once the corn is cooked, it´s left to dry and then ground into flour. the distinctive flavour of a corn tortilla is unique.
Those of us who use wheat flour tortillas - they´re called burritos.
"Nixtmalized" is my anglicised transliteration.

And yes, let´s start a Latin American cooking thread!

With the usual side dish of coconut sprouts (and cauliflower).
I might make a dahl, if I've got what I should have in form of lentils in the cupboard.

Chicken cushions are often available at the butcher I use, never seen a turkey cushion but they are pretty obliging.

Someone in the comments is complaining about the price. I think £10 something is fine for 750g worth of a prepared meat dish.
(I've never heard of it before either).

Well, apart from 4 mince pies left, we've eaten the Christmas fayre. All done for another year.
Last night was a vindaloo turkey curry, mint and mango onion raita, and a coconut spiced lentil, sprout and cauli side dish

That's a very tasty looking dinner dennispc.

Leftover turkey is always a big favourite around here. One day I'll do a turkey curry! Perfect way to round off the Xmas feasting, Gill - lovely meal. I've probably asked before, but do you make the vindaloo sauce and then add the turkey?

Anyone doing a New Year's festive dinner?

I make the sauce on the hob - I've nearly run out of my vindaloo paste. And will have to check my spice stash to make up some more. Add the turkey (and preboiled potatoes), then bake for 35mins.
That way you don't get shredded turkey.

And tonight, we shall have to decide between steak and chips that was postponed, or salmon fillet with a mustard sauce, and green vegetables.
I'll ask Tony.
