Yes, chillies go mouldy and decompose perfectly well.

Birds are partly responsible for the spread of chile plants across South America, because they are not affected by the capsaicin; birds haven´t got saliva. Other animals won´t touch them because they get burned. The foliage gets savaged by all sorts of insects, however.
Coconut milk does seem to mitigate the heat, although I´ve not read anything definitive about it. I imagine it´s because the coconut milk is rich in oil, and capsaicin is soluble in oil - but not in water. Creamed coconut, therefore, will probably help; coconut water will probably not.

Thanks karadekoolaid. I used to like coconut oil for starting some curries before it became so expensive. Maybe a treat present to myself.
