i haven't made choux pastry for years. i remember it being a faf, having to split it to let the steam out unless you want it to be soggy and it being gone too quick to warrant time spent making it when there are other things that need doing.
maybe i'll have another go sometime - now i have less to fill the time.

No she’s not on a restricted diet . Our hospitals rules are one visitor per person per day but you have to book into an allocated slot . Thanks for all your good wishes , she’s hopefully coming home tomorrow.
Tried the choux pastry again today and once again turned out well . I did look on YouTube to get an idea of what consistencythe pastry should be at each stage which I thinks always helpful . Good old Mary berry
