What about polenta Gill? I buy the ready made blocks and they make great chips or "toasts". Just slice as you want brush with oil or melted butter and griddle or bake until golden. I usually have them with eggs poached in ratatouille and I can testify they are great for dipping/mopping up sauce.

I found loads of eggy versions on google too.

Possibly more lunch than breakfast, but I do like something savoury and flavourful on a weekend. I also love spicy stuff for breakfast.

I was wondering about polenta as well, Gill, as LTC just said.

Funnily enough I watched Ruth Rogers making some on a River Cafe cooking video a couple of days ago (it was for serving with porcini) - I didn't realise you could just leave it to bubble away for 40 mins without having to stir it.

what about socca? would that work?
it can be flavoured how you like and act as a vehicle for toppings in a pizza and toast style.

Wow, polenta has got to be great. That's a fabulous suggestion, and honestly, these ideas I just wouldn't have come up with.

That Uganda rolex link looks divine. Never heard of it before.
Scullion socca would definitely work!

It looks like I'm going to be back on the "toast" for breakfast again. It's been a long time.

Sorry, no suggestions from me Gill.

Just want to say how great you must feel now that you have control again. I have a digestive disorder that made life difficult for some years, eventually diagnosed (pretty much by me with confirmation from the medical peeps) and now I take daily medication and it's more or less under control (occasionally eat something I shouldn't and have a bit of a flare up).

Such a good feeling to be able to make arrangements that you'll be able to keep!

I haven't the least idea what that would taste like. I feel a project coming on for that recipe. I'd go for a prawns version, but then I'm a real prawn fan!

SlimpOTI, absolutely. Today is 3 months clear, and I'm quietly confident I can maintain this. Looks like I'm going to be putting my lost weight back on :lol:
But that's a good thing of course.
Congratulations on your improvement too. Nice one.

Flatbreads, EM. I may even buy a tortilla press for the job.
And talking of presses, I've just thought of waffles. Waffles should be OK.

Can't believe I didn't think of waffles! I love them. I've also seen a few recipes for savoury recipes using potato and cheese.

I'd never heard of okonomiyaki before but there is a street food market that sometimes had a Japanese trader who specialises in food from Osaka. I make a veggie version, but it is really tasty.

Wow. No-one has mentioned a Venezuelan arepa yet - the perfect substitute for bread. It IS our bread, in some sense. Made from ground,white, cornmeal, it´s totally gluten free, relatively cheap, can be filled with almost anything you like, is easy to make; the list goes on.

I'll look at the cornbread too, Herbi. Sadly from what I can see, porridgebread has yeast, does it? I love the thought of making bread with porridge & oats and will pursue it.

Arepas, I've heard you talk about them often, KK.
I'd love to try them, and know Sainsbury used to have the flour in their World Food section.

Equal weights of SR flour and full-fat Greek yogurt mixed to a soft dough with added seasoning/flavouring, portioned and rolled out as thin as you like, then cooked on a griddle or heavy based frying pan. I use 100g of each for one generous portion.

If you like waffles, then Pizelle (thinner and crispier) might be up your street, too. In my family we only make sweet, cinnamon flavoured ones that are rolled up into cigarettes or cones, but I think there are neutral or savoury varieties.

An added bonus - I've just found out that the mixture makes lovely dumplings - 20 minutes at 180C on top of an uncovered stew.

Good to know, as I usually end up throwing most of a pack of suet away, as it's used so rarely.

Cornmeal, fine ground, makes flat breads (as mentioned), so does gram (besan, chickpea) flour, so does buckwheat flour (which has a taste to me) or any g-f four - meaning you could avoid both wheat and gluten by all of these for now.

Thin cornmeal crackers are on shelves of the main supermarkets and there's Doritos corn crisps too. (Good for cheese, dips, salad plates.) Not forgetting celery sticks and carrot etc crudites for dips.

Bird's Eye potato waffles are good for eggs etc for breakfast. I sometimes chop them smaller and fry to crisp all round (if oil/fat is OK).

If potatoes are OK, you could cut some big old ones into slices, boil, then saute or not, and make a layered tien stack in a ring interleaved with egg, tom, mushroom.

Big Portabello mushrooms themselves make good holders for drippy poached eggs.

A pizza base can be made from the small florets of a cooked cauliflower, crushed down - there are plenty of internet recipes.

If wheat is OK, you could make pastry jam tarts, but with marmalade or apricot jam for breakfast. Or make savoury bacon and egg etc tartlets.

Q: Do you eat "fancy" muesli? Things like flax seeds and other seeds can disturb tummy and bowels in some, or if eating too many.

I'll give it a :thumbsup for a Polski thread..... I do Kluski Polski 3 or 4 times a year but they don't really go with poached eggs.

I make polenta in my slow-cooker. Very easy and no stirring or sticking :)

Lots of interesting ideas on this thread. Must get around to trying some!!

I did cook some polenta once, including the tray spreading and cutting up. Not since, having learned I can buy it ready made. Either :thumbsup or :oops: No worries.
