Vegan cake recipe please
I have vegan visitors arriving Monday, and I’d like to make a cake for them. I’ve never made a vegan cake, and I’d love a T&T recipe.
I found this one
https://www.bbcgoodfood.com/recipes/veg ... olate-cake
Which I thought sounded fine, and easy.......any other ideas gratefully received Also do these cakes keep fresh? I’d like to make it later today.

Re: Vegan cake recipe please
I made this last year for a newly vegan friend - https://www.bbcgoodfood.com/user/461479 ... lemon-cake
I didn't ice it but drizzled it instead. I'm not a great fan of tooth tingling sweet icing!
(Her fanatical veganism didn't last very long, she missed cheese with red wine!)

Although I've successfully made quite a few dairy-free cakes, they still use eggs, so no good for you.
This is the only vegan cake I've made which I would happily make again, although it wasn't perfect:

My experiences with the recipe:

Reading the few reviews of the Good Food recipe, crumbliness seems to be a common problem with vegan cakes.
Why not make something which wouldn't contain eggs anyway, such as scones or biscuits? Stork block margarine is a good substitute for butter.

Only block Stork is vegan. The tub isn’t. Flora is also vegan now as is vitalite.
I like Isa Chandra’s cupcake recipes https://www.theppk.com/recipes/
These cookies from Pret are good too but make them smaller than they advise https://www.pret.co.uk/en-GB/dark-chocolate-vegan-cookies-recipe I used Naturli block ‘butter’ from Sainsbury’s rather than the coconut oil

Thank you all so much for the suggestions. As it happens I’ve just bought some lovely dates, and as I was rather fancying a chocolate cake, I think I will go with Suelles idea....and useful to have your experience with that one. The lemon cake seems super quick and easy, might do both!
Smitch, thanks for info about the baking fat..luckily I bought Flora, after reading all the labels....along with vegan yoghurt, cheese and milk. The main meals will be veggie curries one day, and a veg hot pot dish the next. We have a pizza oven, and they’ve asked for pizzas, so that’s one easy meal.

It popped into my head that ages ago I'd seen a Giorgio Locatelli recipe for an eggless chocolate cake he'd made for his daughter's birthday - she has anaphylaxis and is allergic to eggs. It's vegan.

Thanks zerocook, I will save that recipe. I really like Giorgio Locatelli, and I’m sure it is a good cake. Every now and then one of my sons decides that eggs are maybe the cause of an eczema outbreak..so I could make it for him then.

Just a question. No, three questions
What makes the pizza vegan ( apart from the cheese)? Is yeast vegan?
And what is vegan sugar??

Re: Vegan cake recipe please
Most sugar is vegan, all widely available sugar in the U.K. is vegan
In the US bone charcoal may be used in the refining process so the resulting sugar is not vegan
Yeast is fine in vegan food, some vegans use a lot of yeast products such as nutritional yeast and yeast extract as well as yeast dough
So vegan pizza is a pizza dough to which you add only plant based toppings, whipich might include for example fake “pepperoni” made from soy

Re: Vegan cake recipe please
Thanks, Sue. The vegan sugar sort of bothered me, since I occasionally have to cook for dyed-in-the -wool vegans.
As for vegan pizzas - I ate "cocas" in Barcelona with roasted red peppers and olives. Marvellous.

Re: Vegan cake recipe please
If buying a pizza, the dough might have milk, whey or milk proteins (or even butter) especially if it's the bready thicker sort. Watch out too for pizzas with the currently popular white sauce which might include milk or egg.
Not a problem if making at home of course.

Re: Vegan cake recipe please
The cakes I made were the lemon cake and the chocolate passion cake. They both look very nice, but I don’t like sweet things, so haven’t tasted them myself. I iced the lemon cake all over as it seemed a bit crumbly and I thought that would hold it together. I used the recommended icing on the choc cake. Our visitors were very impressed and loved both cakes. I would certainly make them again....so thanks for your help. The other recipes are saved for future reference.

Glad they were successful patpoyntz
I'm afraid the idea of not eating a cake I baked is so totally alien to me I can't even imagine it

Re: Vegan cake recipe please
Phew! That's a relief! I'm always wary of recommending things in case a) the recipe doesn't work well and/or b) the result isn't liked.
Glad they were a success.
