The thought of lemon anywhere near shepherds pie makes me want to biver. The whole point of shepherds pie is it’s homely and comforting . It certainly doesn’t need the acidity of lemon running through it

I do wonder what the lemon is like, if it adds acidity without flavouring I suppose it could work even though it doesn't sound right. I prefer cottage pie to Shepherd's. I'd be game to try it with that.

Lemon?????? Not for us....
I do a Pork version - Pig Sty.... lots of thyme with the pork mince. Potato and parsnip mash on the top.

Why boil the carrot?
If you are using leftover roast yoju can reserve a couple of leftover carrots to go in or if you don have them put it in with the onion
Isn’t leftover gravy usually an ingredient?
A lot of people put in canned tomatoes which are quite acid so maybe the lemon is just an alternative to that to cut through the lamb cattiness?

I wouldn’t put in canned tomatoes either . For me , cottage/shepherds pie is always a gravy/stock base . I always find it strange when people make up a batch of mince using tinned tomatoes etc and use half for a spag bol then say the other half could be used for a cottage pie . Totally different dishes I think .
I missed the Parmesan bit . Yes that seems odd and quite wasteful of the Parmesan . I do add grated cheddar to my mash though to top
