And I never realised there was such a thing as condensed coconut milk, that is surely intensely coconutty/oily rather than milky?

Condensed coconut milk is apparently nearly 60% fat :shock: but you normally put butter and condensed milk or cream into ordinary fudge so I suspect each square of made fudge is quite similar to the traditional kind, sugar with as much fat as it can hold essentially

Sounds like a good thing to make for anyone who can’t have dairy as a birthday treat or similar

Not sure about other 2 ingredient recipes - just had some avocado on toast, does that count?

It wouldn't count as two here, as it would include 1/4 inch of butter too.

Your comment about sugar - I presume there is sugar in one or both of the ingredients, "dairy free" I automatically assumed to be something like 85% chocolate, and the condensed coconut I assumed it was just coconut.

Well I just walked to our local exotic store, and could not find condensed coconut cream - so it may take a while for me to source 1 ingredient out of 2.

Avocado on toast yes, that counts.
As does my favourite toast topping = 1/4 inch of butter. I cannot stop myself from spreading it on thickly.

My bit of Googling revealed that the leading U.K. brand of condensed coconut milk is Biona so you are likely to find it in health food / vegan / hipster shops that stock that brand. Bet I’d have no problem finding it in Stokey :lol:

It is sweetened.

I've never seen condensed coconut milk either, it's kind of Gill to try the recipe so I don't have to! I like creamy fudge without additions (apart from rum which is most acceptable!).

I remember in my pre-teen years my birthday present to my dad was always homemade fudge because my mum had told me that's what he loved. Now fudge always reminds me of my dad. Which is not actually a good thing :-(

The condensed coconut milk is available in Chinese supermarkets. I've seen it in Wing Yip and the shop near my old office. Apparently Holland & Barrett also stock it. I've seen it used a lot in vegan baking and desserts.

Annoyed at pasta often being out of stock earlier in the year, I bought a roller pasta maker off ebay for next to nothing. Flour and egg = pasta, asian noodles, etc. And it's way more fun than shopping but then most things are at the moment . Presupposes you have flour and eggs tho. Ho hum.

Does seasoning count ?

I like spaghetti with plenty of grated cheddar , a tiny bit of cooking water and lots of black pepper .

Muffin tins with bacon draped around the hole to make a cup , crack an egg in and bake

Baked apples with the core bit filled with mincemeat .

Artichoke hearts wrapped in streaky bacon - in the oven.
Dates stuffed with blue cheese.
