Right up my street, Pepper.

40g amaranth seeds

Damn! I've just ruthlessly tossed out my packet of amaranth in a one cupboard at a time clear out.
Isn't that just typical.

And what a coincidence, Tony's just shouted out "Vegan Granola in the Guardian!" Looks like I'll be making some.

I wondered how granola could not be vegan but checked and my bought granola, Mornflake original, contains honey

Don’t think I’ll bother making my own, I don’t eat it often

Me too. Oh well, at least it saves the planet from those dreadful bees.

Would maple syrup do instead?

I have known separately two ethical vegans who occasionally ate honey on the grounds this probably supports the honey bee population rather than abusing it

Common sense sometimes breaks out

I’m not vegan but choose not to eat honey. I’d rather the bees were able to consume the product they made rather than being fed sugar water. https://www.vegansociety.com/go-vegan/why-go-vegan/honey-industry

I would use maple or agave syrup on the rare occasion I make something that uses honey. I’ve got a box of Dorset Cereals granola on the go at the moment which is vegan. I don’t eat it often though.

I think it depends on the source of the honey (if you are not strictly vegan). I know a lady who keeps happy bees and takes just a little honey for her own use so there is still enough left for the bees. Obviously she isn't trying to make a profit but does give honey and mead to lucky friends.

I once tried mead. I thought it was the most disgusting drink I’d ever tasted. :o

I agree EM, I have no particular issue with small local beekeepers.

I tried some mead from a small producer the Christmas before last but didn’t think much to it. Not that keen on the flavour of honey if I’m honest.

I tried it first at a rather raucous medieval banquet and it seemed fine  . It wouldn't be my drink of choice normally but I don't mind a few sips.

Didn't the article say that egg white is often used to form "clusters" with the granola ingredients? That would make it unacceptable to vegans.

Yes, it said you could use aquafaba instead but then StokeySue noticed that hers contained honey which isn't vegan either (the vegan version has agave syrup). I think that originally, when many of us saw the article, we wondered what on earth was in granola that wasn't vegan!

I did have a go at making granola in the past, in my experience is the toffee-like coating holds the clusters together, I've never seen a recipe that required egg white

This would be typical of recipes I've seen previously
