just looked it up
I'm tempted to try that cake recipe, but with Felicity's frosting as it's got so much less sugar, and it's not icing sugar either, which I'm not crazy about.
Also, I prefer the idea of one cake rather than a sandwich cake.

looks like you're in a minority, sue!
the cream cheese frosting is a the best for carrot cake. the sort drizzled over, in the 'good food' recipe, would just be picked off and left by me - far too sweet.
the beach café does a brilliant carrot cake, one layer, no nuts or fruit which i can't say i miss - but cream cheese frosting with dried rose petals and crushed pistachios.

It's been a while since I last made carrot cake, but from memory, I used the zest of an orange in the cake mix and the juice went into the frosting with enough icing sugar to make the cream cheese hold together .. I never found it sickly, but creamy

I also did that with the zest and the juice, Pat. I loved it but haven't made it in a long time. I'm not usually a cake eater.
