Fascinating that such varying amounts of ingredients all produce cake! How the increased amount of milk works with the proportions of the other ingredients baffles me.

I’ve just looked at Patricia Lousada’s recipes, she was American - all just a small amount of butter or oil to stop the muffin from being too dry, same in another book I’ve got called American Cookery, no more than 2 or 3 Oz to a large batch (old books)
