Including trapped condensation, from the fridge door opening probably. Glass in a fridge retains the cold so perhaps the contents are less susceptible to temperature fluctuations that create condensation.

Yes, good point, I wondered if the glass had any effect and that could be it

I now find myself looking at Lakeland and those fridge mat and storage bags... A slippery slope.
