Maple syrup

This is not really important, just curiosity. I was cleaning my fridge and as I removed the maple syrup I wondered if anybody could tell me why it should be kept in the fridge.

I didn't know that it should, but I once had a bottle of it going mouldy.

Mine's in the cupboard, or was, until it fell off the wall. I think it survived though. So it should be in the fridge?

Mine went mouldy in the cupboard so it always lives in the fridge now.

Gosh, I've never kept ours in the fridge. We don't tend to use it terribly often either but I've not yet had one go off on me. Luck I suppose.

Goodness, I didn't know that either! When I was a child, a friend of my mother's emigrated to Canada and sent quite a large bottle by post as a special gift. As far as I know, we only ever used it on pancake day and we didn't have a fridge, it lasted for years. How lucky it didn't go mouldy!

mine doesn't live in the 'fridge either.
i inherited a large bottle of maple syrup when my mother died, it had obviously been sent by canadian cousins, maybe years before. we've been using it for nearly six years - and no mould.

I've always kept it in the fridge. It's so expensive I wouldn't want to waste any. I'd have guessed it wasn't vulnerable to going off any more than honey or sugar, maybe that's not the case though!

I was surprised too when mine went mouldy. I looked online though and it can happen.

This happened to my previous bottle too and it was kept in the fridge :o :thumbsdown I assumed I had somehow contaminated it, but I simply scooped the mould off and continued using it up (very slowly) It never grew any more mould.
