Laksa Promotional Overkill
Any idea which company sponsored the recipe book I got this Laksa recipe from?

What's slightly daft about that is that Ayam do a complete Singapore laksa paste - it's pretty good but I suppose they'd prefer to sell you multiple products

I wondered why Ayam didn't just make one given they stock darn near all constituent parts, so it makes sense that they do. Mum's the word eh.

"Laksa Paste" - It's a very old book, I think I got it at some food show or other, it's probably 25 years or more since I last went to one, they have a run down of all the products in the back, and it looks like they hadn't yet added Laksa Paste to their list, although they had tins of Tuna Satay and Beef Rendang on offer.
The odd thing that I hadn't noticed is that their HQ back then was about 3/4 of a mile away from here. I may be wrong, it might just be a dealership overprint, it might have been a freebie from the long-gone Watford branch of Central Oriental Cash & Carry.

I bought the laksa paste on impulse in Loon Fung about 2 years ago and liked it, bought it again

It’s Chicken Brand cf. Squid brand or 3 Crabs brand fish sauce

Ha! I've at last bought a tin of Jackfruit to try out, although I'm not sure exactly what I'm going to do with it yet, but I found another of those "cram in as many of our own products as we can" recipes on the back, with 5 Tropical Sun products altogether.

I saw on TV jackfruit being used as a meat mimic in the same way that vegetarians use "meaty" mushrooms for substance in suitable dishes, so I imagine it works "like that". Whether it tastes good in its own right without meat sub hanging over its head I couldn't say, although the label suggests it takes on flavours a la tofu, so perhaps it is just a "substance".

The only times I’ve eaten jackfruit as a meat substitute it was served as “meatballs” in a local tapas bar, not dissimilar to pulled pork, quite a loose texture, but with a slightly lighter and more interesting sauce than the usual dark brown barbecue stuff. I liked it enough to to order it a second time.

In the back of my mind I feel sure that I was once given some to eat on it's own but can't remember anything about the taste (or lack of). When supermarkets started the current slew of plant foods I picked up jackfruit in bbq sauce from the rtc section of Sainsburys. It was so revolting I couldn't finish it.
I think it really is all about the sauce and think that to get away from bbq sauce and to cut into chunks would open a wider variety of options. Worth experimenting.

I am sure I read that in order for you to get the full nutrititional benefit of jackfruit (for it to be a good sub in this way for vegans) you really need to eat the seeds as well. I also read that it doesn't taste of much. So I've not bothered Not sure why my novelty magnet didn't kick in for this. Probably because too cross at its being suggested as a meat sub when it has a fraction of the protein. (It has a lot of protein for a fruit/vegetable but not in absolute terms.)
It's in the same family as breadfruit (notoriously unappetizing) As are figs and mulberries. I know which I'd rather eat )
Tinned things are rarely better than fresh...?

Breadfruit grows in Venezuela, although I have never actually heard of anyone eating the fruit.
the seeds, however, are a very passable substitute for chestnuts. Only thing is, they tend to go off rather quickly.

I think jackfruit is a sub for meat in terms of texture rather than nutritional quality, but most of the “meatball” recipes I found online added chickpea flour as a binder and protein boost
Breadfruit, like soft white bread, is in my limited experience (I think I’ve tried it 3 times) a good vehicle for butter consumption but has little else going for it
