The veg are contentious - an Athenian chef once assured me that only awful Cypriots put potatoes in

But when Rick Stein interviewed a good domestic cook in the Peloponnesus she put in one layer each of potato, aubergine, and courgette all fried in olive oil. She used beef, but my Athenian friend used lamb, and that’s what I’ve had in Greece. Both are darker in both colour and flavour than pork

Yep, they do. Some "cheaper" tavernas use pork mince

Personally I prefer moussaka without the potato , I don’t really like potatoes cooked” in things “ . I think the potato makes it too stodgy

That reminded me of a dish I have eaten at our local Japanese restaurant, and should have included on my original list. In fact it turns out to be the same dish. :thumbsup

Cheesy baked Aubergine with Rice & Greens
1 Aubergine halved lengthways, flesh scored
4 tsp oil
1/2 red Onion finely chopped
2Garlic cloves crushed
250g Passata.
couple sprigs Thyme ( I use dried)
35g grated Cheddar
100g Rice
100g green Beans
Zest & juice of1/2 small lemon.
---------------------------------------
preheat oven 200C /180 fan
Put Aubergines in roasting tin scored side up & brush with one tsp Oil bake for 20 mins.
Heat one tsp oil in pan & gently fry Onion & 1/2 the Garlic for 5/6 minutes till softened
Add Passata & 2/3 of the Thyme, bring to a simmer & cook for10 mins, remove from heat & discard Thyme stalks if using fresh.
Remove Aubergines from oven & spoon over the Passata mixture.
Sprinkle over the Cheese & return to the oven for 15 mins till Cheese is bubbling.
Meanwhile cook the Rice
Blanch the Green Beans for 2-4 mins till bright green then drain, return beans to pan with remaining Oil & Garlic toss with the Lemon juice & zest then stir in the cooked Rice & rest of Thyme
Serve & enjoy.

I just made caponata for our tea, minus the celery as I hate it!

We both enjoyed it, I’d forgotten how easy it is.

I've only ever made Moussaka with lamb and aubergine. I wouldn't like it using potatoes. I had a ready made one once with potato.

Hickybank, the Cheesy Baked Aubergine sounds good. Thanks for the recipe.

I love aubergines, Baingan, cooked any way, shape or form. I just looked up on my website, I have 45 recipes using them and they are by no means all the things you can do with the. Aubergine Pakoras are probably one of the top favourites for me;. It is one of the most versatile pf vegetables, just love it!

I finally got round to picking my aubergines. But what to do with them (to showcase them)...? They are rather large.

Probably won't have time to cook tonight as have a meeting but thought I had better pick them before they broke the plant.

Coo, they look good, well done.

How about imam bayildi? or anything halved and stuffed. I seem to recall that a quick way is to prick and microwave them first, then scoop out and mix the pulp for a desired stuffing, then baked and topping browned (like cheese or garlic crumbs).

I have (somewhat inadvertently) cooked them in enough oil to make the Imam faint. Not quite cooked enough yet so will continue tomorrow and decide on their final fate.

It's a lot of aubergine... even when cooked down.

A Punjabi Indian dish Called Baingan Bhurta (aubergine mash cooked with onions, ginger, tomatoes) and a garnish of fresh coriander leaves is delicious. It can be eaten with toast, Pitts bread, nan or any other flat bread.
You have already oven cooked your aubergines, so should be easy. I either flame cook or oven cook my aubergines. Traditionally, they were cooked on dying charcoals.

they were fried in butter then sprinkled with icing sugar and served as a dessert
