If you can't find Strong Flour, Tesco's "Stockwell" plain flour (45p for 1.5 kg) makes excellent bread, with a protein level of 10%. I currently have a pack of their their normal plain flour (60p - they were out od Stockwell), which has slightly less protein at 9.9%, but that still seems plenty to make bread. I'll make a test batch today and post a pic. I've also been augmenting my bread with 20% Atta flour recently, and to be honest I prefer it, as it is tastier than plain white bread.

Lidl's plain flour does the job too.

80% hydration. Learnt from my last attempt, which was a bit messy. Paul Hollywood's ingredients and sort of Richard Bertinet method. Next time I'll do RB's version but half a mix. His quantities are always large - before you tell me, the freezer's full already!

Left it over two hours to rise - the photo shows it just as cloth covering was removed and starting to fall back.

Made with Tesco plain flour (NOT bread flour) plus Allinsons Easy Bake yeast, 2 hours in total from scratch, with a bit of every cheaty method I've ever come across thrown in!

They freeze perfectly too, just chuck straight in the freezer.

It puts in the [img ] [\ img] markers automatically, you seem to have them twice, which is why there’s text not a photo - did you add them yourself as well?

I can see the photo - maybe it's a browser thing? (I also see ads for Asian goddesses but that might be to do with the hosting site.)

Looks like a decent loaf to me :)

Don’t have a problem with posting photos on this site using iMac Preview and Tools enables any change, plus upload attachment works for fine.

However, on a Mac Forum that can’t be done, it needs a hosting service so thought Amy’s post was the answer. However, it has adverts which I don’t want to encourage. How do you get round that Amy? Or anyone else?

It seems to post a clickable thumbnail if that "after lunch" pic is the end result, which if you click it links to a big pic on the host website with the ads that have been mentioned...

Thanks Sakkarin, I follow that. Don’t click on it, but for me it’s a bit small …. What did surprise me when getting the big picture, along the top it was possible to download the original picture. That came up in Preview and I could’ve altered the size myself!

My baking friend tells me, a normal bread mix can be turned into a ciabatta by adding 25% more water. I’ve pointed out that would give me 90% hydration - not sure I could handle a mix that wet. :D

A very rustic :tongueout rhubarb and custard pie today at work . Tesco’s have got it half price at the moment and I absolutely love it !!

I got round to making the Bread & Butter Pudding I've been lusting after since it cropped up on the milk thread.

I think it looks rather cute, it stars one of the "plain flour" rolls I made the other day, sliced carefully at a jaunty angle, lightly buttered, stuffed with sultanas, and put back in the order I sliced it. Fitted the bowl perfectly.

I made a rhubarb and orange clafoutis at the weekend, to a Tommi Miers recipe. The original requires a blood orange, but I used an ordinary one. Unfortunately there is none left to photograph, but we would recommend it! :yum

Sue, can I ask a question about your Brioche Burger Buns please. How did you find them for size, i.e. would they be about right for a quarter pounder size burger?

I have been able to make an order for flour and can therefore have a go at some non "daily bread" items (wouldn't dare experiment with the current supplies we have).
