I do exactly the same.. I have taken out one of my fridge shelves for that reason .

thx for all the advice about the cheesecake - it turned out really well, and I don't even need to throw away the foil dish as it's still usable!
White chocolate and vanilla cheesecake with a berry topping and ginger nut base.

I did thing about getting a spring form tin or two with a glass base so I could just remove the sides and put it on a nice big cake plate but I never bothered in the end

Thanks all, 3 of us managed to get through 7/8 of it :oops:

I didn't know you could get spring form tins with glass bases, Sue. I can see their attraction and so much easier than sliding the cake off the base, even when it's lined.

I have bought more Springform tins than you could shake a stick at.

Make cheesecake or whatever, take to Sunday lunch/birthday party/family occasion.

Look for it next time the same is needed. If I’m lucky I’ll find the springy bit but generally the base will have been left behind somewhere.

The cheesecaske looks lovely. I'm not sure what the berries are, but you've reminded me how much I like decadent black cherry ones.

Pepper Pig, you'll have to label the springform bases: "If found, please frisbee back to address: ..."

That cheesecake looks fantastic, I could eat a slice now.

We’re making a batch of breakfast muffins this weekend for the freezer. If anyone has a favourite version, I’d love some ideas please.

It was lovely and really quick to make. I didn’t bother with the custard as I was feeling lazy.

Both the cheesecake and apple cake look lovely.

Is it only me who always wants to eat the fruit and cheese filling on a cheesecake separately? The filling is always so delicate the fruit seems to overpower it. Both are nice of course!

The apple cake looks worth knowing about, especially if cooking for vegans. It looks lovely and moist without falling apart. If anyone else gets a bit lost reading it, the ingredients and method are listed at the very end of the piece.

Wrong thread, but whilst on the subject of vegan cookery, the banana 'non-cheesecake' that Nadiya made on her programme last night looked rather good I thought.

The amount of text and waffle on that website annoyed me, EM. The ‘jump to recipe’ doesn’t work either. Luckily the cake was worth it.

I have both her books and have enjoyed everything I’ve made so far. I use her vegan frittata recipe as the basis for the ‘quiches’ I’ve been making recently.

Just seen an advert for Hellman's new vegan mayo. No idea how it tastes or performs if heated. Just posting in case any interest before I forget.

A cup of Tesco's Frozen Summer Fruits Mix cooked with a little lemon juice and sugar and left to thicken when cool. I mushed them up as the blackberries were ridiculously large, compared with the raspberries, the black- and redcurrants.

Thanks KeenCook2. Did you find that half the packet was redcurrants, which are more seed than fruit, or was I unlucky with packets I've bought?

No, actually not. There were also quite a lot of blackcurrants and a reasonable scatttering of rather huge blackberries and decent raspberries. Maybe I was lucky!!
I've had the bag in the freezer for some time so I don't know when the fruit was harvested. Maybe the proportions vary depending on the time of year and so you were just unlucky as that's all that was around when that batch was packaged??
