We have a large ripe pineapple.

I like it marinaded with a little kirsch, rum, or best of all maraschino, but that doesn't get you through much
I like pineapple salsa, I make it up as I go along but Jamie's version looks good, you could use coriander instead of mint

Nice with smoked chicken or in fact almost any form of dry chicken, or grilled tuna steaks, or pork.

My favourite is to griddle slices , sometimes with a knob of butter or brown sugar. I then chop up quite a lot of mint, finely , mix with sugar and a squeeze of lime juice, plus the zest and sprinkle over the cooked pineapple.
There's also the retro school dinner favourite of pineapple upside down cake, cherries mandatory

I like it with chilli oil and then natural yoghurt or sour cream on the side, not v exciting but delicious.

Just after reading this, I read the latest edition of Good Food magazine and saw this slightly more exciting version of a pineapple upside down cake . I love coconut and lime so sounds straight up my street. https://www.bbcgoodfood.com/recipes/tro ... -down-cake

We used to make a pork (shoulder chunks) and pineapple stew, also retro as not many spices around at the time. I imagine Chinese 5-spice could be added happily. Served with a dark cabbage or broccoli.
Pineapple, being slightly tart, makes a good filling in meringue Pavlovas.

I'm sure I have a recipe for pickled pineapple somewhere.
My aunt in NZ used to make it to serve with barbecue food.
It was pretty retro but I quite liked it.
I will dig it out if anyone is interested.

my thought was on the same lines as yours but with malibu. maybe this, blitzed up and poured over ice cream would be nice - or made into a sorbet (it would be a soft one because of the alcohol content).

Put vodka in a Kilner jar with spices like cinnamon, star anise etc. Add chunks of pineapple and leave in a cool dark place for a few months, giving an occasional shake. Then drink the vodka and eat the pineapple!
I also make a prawn, vegetable and pineapple sweet chilli stir fry.

1) Diced pineapple, diced red onion, coriander leaf, fresh green chile, salt, lime juice.
2) Piña Colada
3) Pineapple Curry ( you would be surprised how GOOOOOD that is!)
4) Pineapple and ginger jam
5) Stir-fried prawns, red peppers, onions,garlic, fish sauce, pineapple chunks
6) Grilled chicken and pineapple with chilpotle & lime sauce
7) Skewers with cheese, pearl onions and a pineapple cube... (NOOOOOOOO!!! HOW COULD I REMEMBER THOSE??? )

I made a very short list of my pineapple concoctions yesterday, but never got round to posting it, meanwhile KK has got two of the ones I was going to mention in the frame already!
Here they are anyway, the first piccy has Nancy Lam's Pineapple Salad (pretty much as KK's) and Vatch's Thai Pineapple Fried Rice.

The other pic is Thai Ma Haw/Galloping Horses, as made by a Masterchef (quarter?) finalist a few years back.

On the pineapple curry, Nancy Lam has a recipe that looks daft, but I am going to try it later, which involves a whole pineapple for a whole chicken. Have most of the ingredients to hand, they're still selling fresh turmeric in Tesco.
I also found this pineapple curry I made in 2016 on the old site from the Torode Malaysian series, but it sounds like it didn't live up to its promise.

Gathered all the ingredients for that Chicken & Pineapple Lemak, and noticed there was NO chilli at all in it, so wondered if it can really be called a curry.
Looked up "Lemak" -
"...although Lemak in the Malay language is a general-purpose word for fat (lemak babi translates to pork lard), in a culinary context the term refers exclusively to the coconut milk creaminess in dishes like Nasi Lemak and Laksa Lemak, or Nyonya Kuehs."
Will be making it anyway.

I’m slowly working my way through Mandalay, Burmese food
Few of the curries contain chilli, but are always served with at least one fiery condiment. This week I’ll be making the egg curry, which does contain chilli.

I actually thought of Burmese curries when I saw it had no garlic, ginger or chilli in it - my Burmese curry epic was ages ago though, I've forgotten most of it
Looking back, I see it was on the old Wildfood board, before this board even started. You started the thread in May 2011. Sheesh, 9 years. I see my first post on there wss an egg curry EDIT: although the post says that I made the eggy curry three years earlier...

Talking about Burmese food - has anyone been to the Burmese restaurant up the Edgeware Road?
We went there 5 years ago - I wonder if it is still there. Interesting food - a sort of fusion between Indian, Chinese... and I suppose, Burmese!

That one in Kilburn was called "Mandalay", I think Stokey said she'd been there back in the original thread that kickstarted the Burmese thing off.

Yes, Mandalay at 444 Edgware Road was more of a caff really, bur was the location of an early Wildfood outing.
I’ve been to Burma since of course, and to a Rangoon sisters pop up last summer
Word on the (Burmese) street is that the current best Burmese restaurant is Lahpet in Shoreditch, Lahpet (say Lapp-ett) being pickled tea leaf salad
