Aligot isn't meant to be much like English mash, it's almost a sauce

Maorrison's Tasy Lancashire is excellent (I think it's Butlers)

I might use the famous Shorrocks Lancashire Bomb, which is a wonderful creamy cheese and encased in black wax.
