So I guess my Veganuary month is kind of over as I’ve done a couple too many slip ups mainly involving extra mature cheddar .
I certainly think I can have a couple of vegan days a week . I will use just plant based milk in future and I tend to use non dairy spread anyway . It’s just cheese and eggs really . I do feel healthier and have definitely expanded my repertoire .
Have lost a couple of pounds , eating a lot more veg , which is only a good thing and discovered a love for tofu

Amy at least you tried. I’ve never attempted to go fully vegan because I know cheese would be my downfall, even though I don’t eat very much of it. Cheese calls to me from the fridge!

I reckon it takes a year or so to change one's eating completely. There's so much to learn. Aside from what's in bought things, it's learning new food combinations when meat is no longer the determinant of other flavourings. Also, it takes a while to learn how lookalikes like milk behave for different uses. Strangely enough, I thought the not-Cheddar by Sheese was one of the better cheeses I tried (and would buy if I was fond of cheese).

I don’t really like baked beans on their own and normally tend to tart them up a bit otherwise I find them a bit meh . Normally it’s a bit of chilli or some curry powder . Those do look nice

I'm planning some Fish Fragrant Aubergine with a nice fat aubergine I got from Lidl for 49p. The recipe uses chicken stock, but I'm going to try it with Marigold veg stock, which should render it veggie.
Tesco used to stock Chianking vinegar, I'll check later to see if they still do. Unfortunately in my view there isn't really a substitute.

Made my Fish Fragrant Aubergine with Marigold veg stock powder, and it was still delicious, so I assume this is completely Vegan. Very oily though (what do you expect with deep fried aubergine!?!), so not for everyday consumption. I ate it on its own, but of course easily pairs with plain rice for a full meal.

That does look good, if one is a chilli belly. I always swear by natural yoghurt for somehow separating oil and bringing it to the surface (to blot off with kitchen paper if excessive).
Sakkarin et al, please check Marigold label as the classic green one is not vegan (milk) but the purple low salt one is vegan. The two also have different ingredients by the way so don't taste the same.

It’s called Fish Fragrant because the blend of flavourings are those traditionally used to cook with river fish, not because there’s any piscine content

You should feel pleased with yourself Amyw, because you’ve found a ‘diet’ you feel comfortable with and has improved your health.
My BiL was asking yesterday about plant based diet - his GP has put him on statins because his cholesterol is 6.9. It’s not a surprise as its been high for a little while, but puzzling because he’s slimmer than me, does a lot of exercise and they mostly cook from scratch with plenty of veg and fruit.
