Quick tomato and Philadelphia pasta sauce
Thanks to whoever posted this idea a few weeks ago. It wasn't an actual recipe, but this is what I have sone today for lunch instead of buying a supermarket sauce.
Put pasta on to cook.
Fry an onion and some garlic; open and add a tin of tomatoes. Sprinkle a small amount of italian dried herbs. Add two large dollops of cream cheese and some fresh torn basil. Stir. Pour over pasta. Takes about 10-15 minutes from start to finish.

I can add Axel's cheat Carbonara sauce:
Ghee or butter fat
Spring onion cut into thin slices (white bits) and somewhat longer ones (green)
A few slices of boiled ham
Creme fraiche
stock granules
Parmesan
salt, pepper
Put the pasta on,
then fry the white bits of the onion in ghee until lightly browned and tender, add cut up ham, fry just a little more, then add a little water with a few stock granules, and creme fraiche to taste, add the green onion bits and leave them to go tender.
Salt and pepper to taste, and finally add ground parmesan.
I know, I know, it is a far cry from the original, but it is quick and easy and it does hit the spot, especially with fresh tortellini or something of that kind.

I quite often use a soft cheese in place of cream in cooking, as I usually have some but don’t always have the cream
Works in mash but for pasta I sometimes shred leeks and sweat with a little butter and tiny splash of water until soft. Add seasoning and cream cheese and additional flavours as needed. It based on a recipe for leek and ham, so you’d need to add chopped ham and grated Parmesan. I often start by frying bacon lardons and then softening the leeks in the juice. But just grated cheese and herb of choice works

I have been known to make Fettucine with 3 sauces:
Tomato sauce
Pesto on top
A dollop or two of Philadelphia
Easy, tasty, yummy!!

cream cheese melted into chopped and fried mushrooms, onions and garlic, plus seasoning, then mix in the cooked pasta.

Boursin woks even better than Philly as a suace. Good with leeks and cauliflower.

My wife sometimes braises leeks in plenty of butter (or olive oil) then adds Philly, until it melts. Delicious with anything!

If you add a few pointy peppers to those onions when frying Binky, then blitz after the tinned tomatoes have cooked out, you have a pepper sauce or a soup depending on what you fancy.
