Coincidentally I had mushroom risotto half an hour ago for lunch, almost identical recipe to that. Nothing to do with Felicity, I used Antonio Carluccio's recipe and added a slug of white wine. Lovely, but I feel a bit bloated now!

Hmmmm…… you would have to be massively into mushrooms - big time - it can look very 'greyish' & unappealing.

I love mushroom risotto and it’s probably my favourite type of risotto . Really let’s the mushrooms be the star of the show and a great comfort food too especially as the weather gets colder

mushroom risotto is the only type i make - in order to turn it into arancini - the real star of the show.

I made the Jamie Oliver version with onion, garlic and celery in addition to the mushrooms. It was a delicious lunch, and totally inspired by this thread.
