Ina v. Jamie: Brisket

Two programmes on the Food Channel today, back-to-back.

Ina cooked brisket for Geoffrey's dinner, plus a chicken liver pate (made with 2lbs of liver). So far so good (but a humongous amount of food for two adults).

Jamie, coincidentally, cooked the same size of brisket and it served 6 people for Sunday lunch, and he had enough left-over to do a Korean stir-fry later in the week.

I've always thought Ina was someone who cooked too much food, but this confirmed my suspicions.

I find Ina’s portions ridiculous though to be fair her written recipe for brisket says it feeds 8, which sounds about right with some leftovers as it does shrink with cooking

I know what you mean about Ina's portions, but they never seem to eat that much of whatever she cooks. I assume she must have one hell of a large film crew diving into the grub afterwards. At least it saves on caterers! :lol:

Ina's programmes that I've watched have been, as she says, heart attack on a plate, being often creamy or fatty, although I'll happily confirm that all her food looks great.

She’s very good, on the plus side, at showing you how to do things simply and without faffing about, some good practical tips

But the portion sizes, and the legion of camp florists and interior designers do raise a smile

Having said which, the joint Jamie cooks for 8 is only a little over half the size of Ina’s his is 1.5 kg (3.3 lb), hers is 5.5-6 lb (about 2.5 kg)

I remember as a child, approx mid 1960's my uncle ran a restrant and he served an average of 4oz(100g ) meat/chicken/fish per serving boneless and about 5 to 6oz (150g ) with bone. I find that these serving sized work well if server with lots of veg.

I gave up when Admirals pies were sold on offer flashed “25% extra free”

Which is often reasonable
But these are individual pies so one of the versions is an inappropriate size

Important to note that American servings are about 17,000 times bigger than anywhere else on the planet.

Three things to say.

First I would kill for a piece of brisket to pot roast

Next I'm afraid I have never seen Ina - so don't know who she is

Last You are so right kk. We rapidly lreaned to order one meal between the two of us - unless it involved oysters! This aused considerable concern and constant reassurances that we could have a doggie bag to which we said we didn't own a dog and we didn't wish to waste good food.

in a pizza hut in florida, nearly forty years ago, we ordered a ten inch pizza between us and had a single trip to the salad bar (the bowls were bigger than the uk ones) it was more than enough. there were four americans on the table next to us who had the same sized pizza each, plus a lasagne and five trips to the salad bar each. they were rather larger than us!

I first encountered Ina in South Africa, her books were everywhere but I’d just missed the TV series, so for years I thought she was South African, Ina being a popular name there.

But she pronounces it Eye-na and my South African colleagues (and my local podiatrist) say Ee-na

South African portions are generally aimed at rugby players
