How about saddle of rabbit with mustard ? Mash, polenta or gnocchi for a start?

I'd go for mash again (as a man with several sacks of spuds in the shed )
Additionally, maybe something seasonal that would go with the sauce. Cauliflower perhaps?

I have cauilflower and that would be M's first choice, I also have spinach, butternut and spaghetti squash.

Here's one for Sunday. I've invited some friends one of whom has been in a out of hospital for more than 2 years as the result of an argument with a wild boar and his motor bike. He was in grave danger of loosing a leg.
I'm planning on Osso Bucco as the main course. The recipe I use has porcini mushrooms in the sauce but what elseto go with it.

I tend to go for the classic plain risotto Milanese with osso bucco and let the veg go into a separate salad or starter

hmm - as a vegetarian i was musing on that one.
i can understand that few people would consider eating the leg (even though it is just meat) but would you consider eating the boar if it had eaten the leg? would there be a dilemma for those who usually eat meat?

Scully i see your point but I happen to know that Christian would happily eat a leg of wild boar if offered one - as long as it wasn't served with prunes
I'm tending towards the risotto too. As for veg, two of the guest don't eat broccoli or cauliflower so thinking green beans or just a salad with the cheese.

Celery braised in the sauce, with carrots.
Braised pak choi or similar green leaf, or chicory maybe if the sauce is sweet enough to take it.

Spinach gratin and maybe some steamed new potatoes , possibly with spread if you can’t eat butter . Or cheesy mash , peas and grilled tomatoes

Or do what my (fishmonger) grandmother usually did.
"Dip it in flour and fry it in butter" or equiv.
We often do a healthy fish and chips.
Oven cooked wedges, fish added to the tray naked or en papillotte, peas of choice.

A favourite way of doing white fish fillets is to bake them on a bed of tomato slices and top them with a layer of tapenade then a layer of persilade ie chopped parsley, garlic and breadcrumbs and a drizzle of olive oil.

I haven't tried haddock with tapenade so that is new to me. I'd think cod, hake or tuna so it should be interesting with haddock.
Fish & spinach with a custard like Florentine or as a gratin would be a first. As I have some shortcrust in the freezer, I think an experimental quiche is called for. Since the oven will be on, cherry toms and mini wedges could find themselves on a tray.

I remember that in my days as a newlywed, a favourite method of cooking fresh haddock or cod fillets was to season then put on a greased baking tray under the grill until just cooked and then top with grated cheddar and a thin slice or two of tomato and put back under the grill until the cheese bubbled and was just beginning to brown.
Served with creamy mashed potatoes and green beans or frozen peas it was a quick, tasty and nutritious supper for a busy couple.

Not a side but a menu issue
I have to cook Saturday night dinner and Sunday lunch for myself and a friend
I want to do starter and main, no dessert for each
Assuming my fishmonger has the nice little lobsters he has had recently, I will make Gordon Ramsay's simplified Thermidor, as a starter which is quite rich so need something to go after.
Then on Sunday I fancy lamb, so probably will do Madhur Jaffrey's Moghul lamb with accompaniments, and need a little starter to go before
