bottled/canned beef stew contest!! i enter

august 20 2019 at 6:45 local time I entered a homemade version of beef stew that i canned/bottled
in a contest at my local fair in preserved food category for meat stews.
the judging was august 20 2019

i will get to see the results august 23 2019
I will post the recipe on august 24 2019 win or lose.

I hope win. since this stew punches you in face with flavor of beef. and it took 16 hours to make.
Since I made the demi-gloss my self. which took 7 hours and stew took 7 hours in slow cooker.
another 2 hour for whole pressure canning process. yeah; I think went over board on this recipe
contest entry. Several family members who tasted it says it was my best beef stew ever.

scullion correct. For the contest; I needed understand beef stew at the most fundamental level. Also the difference between A high class dish and home cooked dish.
Since the first taste was all i might be able to expect from judges.
If the judges did not like it the first taste it might been eliminated.
Also they might be tasting it cold.

If it’s any comfort, WG the winners of baking and jam classes at our agricultural shows usually only get a rosette and maybe £1 and a certificate.

this was only the second time dis pressure can dish, first time with low acid one

Not a bad prize for an amateur competition. People on my county would be very impressed although the classes are for less complex recipes and involve a lot of traditional foods.

fair contest results are august 23 for food preservation classes. since fair opens officially on august 23 noon.

there were two entries including mine, since the category was new; it replaced a retiring category" mincemeat".
if I win or place; it will not be my first win in a canning/bottling category for food preservation.
A few years ago I took third in tomato sauce and two years later I took first in tomato sauce.
When took first I beat an Italian lady . She had placed and enter in 126 categories; and won or placed in many of them.

British mincemeat usually a Christmas ‘preserve’ . It has nothing at all to do with minced meat (usually called mince over here) . I haven’t got time at the moment to explain, but if you Google mincemeat (one word) you’ll get the idea.
Then of course, we’ll get loads of replies on here , everyone giving their special recipes and probably a good explayof it’s history!
