Re: Baked potatoes
Interesting about not retaining smokey taste after cooking smoked garlic. I've been wondering what I was doing wrong.
Have you tried a couple or three (no more than five) seconds in the microwave to peel them?

Re: Baked potatoes
The easiest way to maintain the "smoke" is to apply some liquid smoke, or some smoked salt

I am a big fan of liquid smoke.
Bashing the little round garlics worked fine.
Didn't they used to sell something like this in Lidl, at one time? I'd forgotten about it...
I really ought to plant my garlic. It's been so wet lately, though, and I have been busy with flowering bulbs and foxgloves.

Smoked garlic is very over-rated - smells lovely but tastes of nothing, give me fresh every time!
Another fan of liquid smoke here - hickory or mesquite.
And then there's my stove top smoker..............

Re: Baked potatoes
A friend who farms and smokes garlic says his favourite use is to keep a smoked bulb of garlic in a jar of rice ... he says the rice absorbs the smokey flavour ... I tried it for a paella and it was great ... must get some more smoked garlic.
