I have used Patricia Lousada’s recipe, lots of mustard, spices and molasses or black treacle, cooked starting with dry beans

To me that’s more of a sausage and bean casserole , not that there’s anything wrong with that . I make a sausage bean hotpot sometimes at work using sausages, onions , garlic a tin of baked beans , sometimes mushrooms and top with sliced parboiled potatoes and grated cheese before baking . Good comfort food and have put on menu next week actually

I always thought Boston baked beans used belly pork in it . Something I’ve sleays fancied making . Not a massive bean fan , but can tolerate baked beans

I think Boston baked beans originally used salt pork belly out of the pork barrel, but these days is usually made with a piece of streaky bacon.

Bacon should definitely be in one piece, no tomatoes.

I think the recipe Mark shared is a quick recipe, looks pretty good for a cheat version
