chicken a la maryland /fried chicken day!!!!

hello this is my first post
I decide to post about my favorite dish.
Give that is the holiday in the home country for this dish.
Today is July 6 it is national fried chicken day.
An my favorite dish is Maryland fried chicken or as it also known when properly
cooked chicken a la maryland.

it is best to use chicken parts that still have bone and skin on make this dish
the dish is very basic but to many bad copes have given the dish bad reputation.
maryland fried chicken is pan fried chicken that is dredge seasoned flour.
the recipe
to before dredging the chicken in season flour dip the chicken cool water then into the dredge flour.
then set aside till oil or shorting is hot.
the chicken needs to be cooked in heavy frying pan at least 5 cm deep and have lid
bacon is fried pan first so drippings are used make cream gravy and bacon for use at serving time.
take smaller frying and add following to make gravy
to make gravy use 44ml bacon dripping and 44 ml of flour to make a roux one you make the roux.
once roux is smooth add 1/4 liter of whole milk an cook on medium temp till the gravy thickens.
to cook chicken an enough vegetable shorting about 2 cm with chicken in it.
the chicken is first browned on both sides for about 2 minute at at 385F/196C temperature
then the lid it put on and then temperature is dropped to about 320f/160C
the pieces need to cook 10 min -20min in the lid covered pan depending on the pieces being cooked.
it best to cook all the same type chicken part leg,breast,wings and thighs at same time.

once chicken is done hold in oven till the whole batch is done.
to serve place the chicken a plate then pour gravy over just before serving.
then chop up bacon and sprinkle on top

traditional sides are corn mash fritters, corn on the cob, mash potatoes,or a slice Maryland potato pie.

one other note please do not for the abomination of serving fried banana or pineapple with chicken Maryland
the banana thing started in NYC before 1902 and went to UK in 1902

Thank you for the recipe!
However, I beg to differ on the banana/pineapple controvery.
Corn fritters are sweet - and corn is from the Americas.
So are pineapples.
Bananas originated in South East Asia, moved to China and the Middle East, Africa and eventually ( during Spanish and Portuguese colonialism) to North and South America.
the combination of (sweet) fruit and chicken is not to everyone´s taste, but personally, I think they go extremely well, and if the Chef who prepares Maryland Chicken feels that they combine well, then so be it!
There are no absolutes when it comes to preparing a plate of food!

1.As I said that the serving of fried banana and pineapple is not Maryland USA thing.
2. from the articles read on the subject most people consider banana stuffed in chicken as it now done
yuk.
3. you are going to serve a banana like food with chicken; plantains are better option since they a more starchy option and usually not very sweet.

Karakoolaide & Renée,

Fresh fruits, pomegranate seeds and dried fruits (dates, figs, apricots ) are very common in Moroccan Cuisine and yes, they are common in Andalusia particularly.
They are a truly lovely pairing in tagine / tajine (Berber) cuisines too.

I truly enjoy wild monkfish with pomegranate seeds and a drizzle of ecological honey and / or Greek style monkfish with peaches.

Very enjoyable too is a prawn / shrimp salad stuffed in a pineapple for a tropical flair especially in the Canary Islands where this sweet and salty tendency in Spain is also very common.

Without wishing to appear polemical, I fully understood your post. I read it through several times. However you say it is traditional to serve it with corn fritters - tradition is one thing, abominations are another. When the great French chef Escoffier tried Maryland chicken, he loved it so much that he included a recipe in his book - served with BANANA!

I do not understand what you´re trying to say in point (2). Banana fritters, ok - but chicken stuffed with bananas? Where does that come from? And how can you be so categorical to say that "MOST" people dislike it?

Plantains may be a better option for you, or for many South American and Caribbean countries. However, bananas work very well with savoury dishes. You can make savoury puddings with them,combine them with curries, coconut and/or chiles. Yes they are sweeter and less starchy, but once again, that option depends on personal taste. And might I add, because I eat plantains at least once a week, that they are ALWAYS sweet. Never as sweet as a banana, but always with that sugary nuance.

In modern times, Maryland Chicken is frequently served with a pineapple AND a banana fritter. It may not be authentic (but then neither is a chicken mushroom Alfredo sauce!) but it´s what the consumers enjoy.

I know you don’t like it when people disagree with you, wargarden, but it seems to me that apart from when you are baking, there are very few cast iron rules in cookery. If you find a way that works for you and you like the result, that’s fine. Experience of cooking counts for more than reading about it.

Wic it is not matter rules it matter calling thing by there proper name.
if few extra ingredients may change the character of dish
or how cook the dish then you should call it a different dish.
here are few examples
cottage pie and shepherd's pie : different meats
chicken fried steak and country fried steak: diffident gravy
Spag Bol and SPAGHETTI NAPOLITAN: the later usaully uses ketchup based sauce
popover and mini Yorkshire pudding: different fat and baking vessel used
Salisbury steak and hamburg steak: different meat mixture
chicken maryland and drenched chicken : different gravy
deep fried chicken and pan fried chicken : different cooking method
aspic and fruit jello : one savory the other sweet.
pot macaroni and cheese and baked macaroni and cheese : cooking method
reuben sandwich vs grill cheese sandwich: the first one has dressing,meat,sauerkraut

Also adding certain ingredient to dish can cause food scandal Jamie Oliver
is and expert in this.

For example if a restaurant served you toad in the hole or if a newspaper published recipe called toad in the hole
that replaced the rashers with bacon,meat balls, hot dogs, or slices spam.
What type reaction would that restaurant or newspaper get " "
But if served the same dishes suggested as batter pudding with bacon,meat balls, hot dogs, or slices spam.
how would people react " " , my guess very little reaction.

Wargame,

Kétchup was developed in the Usa, in 1732, and hails from The Chinese Honkkein Word: KE - TSIAP ..

This ingredient has nothing to do with Naples or any other part of Italy.


As my father´s parents are Italian, and had immigrated to Barcelona many years ago, the general Napoli Region Tomato sauce is as follows:

Very ripe red Italian plum tomatoes or fresh San Marzano
Italian Extra Virgin Olive Oil
Fresh Basil Leaves
Freshly ground black peppercorns to taste
Fine grain sea salt or salt of choice to taste
2 cloves of peeled and lightly pressed garlic
The Tomatoes

Member 461 you are incorrect ketchup started in Asia then moved uk and then to what is now the usa.
tomato ketchup did not come on the scene till 1812. before that recipes called for ingredients like mushrooms,
walnuts, oysters, or anchovies most these are British in origin.

It was developed in China .. the ingredients were quite different according to National Geographic.

The article also indicated 1732 as a strategic time .. And then again in 1879 or close to that year, Heinz created a preservative free real tomato ketup.

It is quite late here and I must be up at 6am.

back to chicken Maryland the UK should be more respectful of a dish that saved the UK from a bad king and gave it a good king
that kept the Uk in good spirits doing WW2. since chicken Maryland was one of many dishes that helped Wallis Simpson ensnare KING Edward VIII.
thus leading to king George VI.
