Homemade gravy - without meat juices

Postby Binky » Tue May 28, 2019 9:48 pm

We used to buy Swiss Marigold bouillon powder for our gravies but have now discovered that it contains palm oil (and we are boycotting products with palm oil as an ingredient).

Looking at recipes on line, it seems all of them expect you to have meat juices from a roast or something, and have this as a principal ingredient.

Does anyone have a tried and tested vegetable-based gravy recipe (or knows of bouillon brand that doesn't use palm oil)?

I don't know as even Kallo organic includes palm oil, but I see Member 461 has just suggested one :)

What I do if cooking gluten free is to use cornflour, water, tamari (or dark soy sauce) and a spot of EVOO.

Extras:
Ginger and dried herbs to suit. Garlic optional.

For veg, just a bit of onion finely chopped would do, although I've taken to making the trio of celery, carrot and onion in a big batch, then once sauteed, make big tablespoon quinelles of them, open freeze on a tray then bag. One of those is handy for veg.

If it doesn't need to be non-meat, you could save excess pork, bacon or chorizo fat and add a spot of that.

Can add a dash of Worcestershire sauce or fish sauce depending on what the gravy is for.

Looking at the ingredients on Ocado, the Organic vegan Marigold in the brown or maroon tubs seem to be palm oil free. No idea if the taste is the same as their other products though.

Snitch is correct, the Organic Red Marigold uses sunflower oil not palm oil

I know of a product that is great called "More than Gourmet": https://www.morethangourmet.com/poultry ... cken-stock
that the chefs on the Beeb used to recommend.
Renee and I used to be able to get it in the UK, but it's not to be found anywhere now sadly. You could get beef veal chicken veg etc etc stock.
Ebay has it, but the shipping from the US makes it too expensive for me.

It gave your gravy and sauces that restaurant-ness. The best I've tried.

If Renee sees this, I believe she uses a product that is just as good.
Whether it is palm oil free, we shall see.

I remember those Morethangourmet stocks too - such a pita when you can't get hold of them anymore! I keep little pots of these in....

mostly the fish stock - gone are the days when I made my own - Lakeland sell them.

OH is keen to try jeral's suggestion of celery, carrot and onion quenelles. I've also written to Marigold to find a stockist of the organic bouillon powder in my area.

Looks like I will still be able to have gravy on my mashed potatoes and lentil shepherds pie after all.... :klingonbanana

Binky, it's very satisfying to make quenelles and they're very easy if you use two spoons - scoop into one, then smooth top with other spoon whilst scooping out of first, then repeat with the first (now empty) spoon, which gives a neat 3-sided dollop.

For my black bean pastry pie, I make a separate gravy and add a few black beans into it for flavour and body, then do a quick blitz. Maybe something similar for your lentils, or maybe a couple of mushrooms. Also good for veggie sausages and mash.

I’ve made this before and it’s lovely . You could use the ale sauce separately as gravy .

Gill, I order Essential Cuisine online from the company because they have the full range.

Here's the website:

https://www.essentialcuisine.com/products/

The two products that I checked contain rapeseed oil.

Holland and Barrett and health food shops tend to stock the purple vegan one.

Knorr's veg cubes don't contain palm oil - at least my ancient pack doesn't!

The purple one contains palm oil. Only the organic versions are palm oil free.

I have had a nice reply from Marigold. Although they supply various supermarkets, they have no idea where the different bouillon powders are actually sold. It's all to do with local shopping habits, and shelf space. So I expect that a Waitrose in an affluent area might carry the organic bouillon powder, but a Sainsbury in an inner city might not. :?

Three supermarkets stock the Organic Marigold Stock Powder, which contains sunflower oil. I checked on their website.

They don't necessarily stock them in every branch though.

As for gravy, depending what’s in the fridge, chop carrot, celery, onion, leek, sometimes add a potato.

Sauté, add a couple of slugs of wine - depending what you’ve got around - reduce completely, add water and simmer.

Strain, or whizz together as appropriate.

I’ve a few small plastic tubs to put in freezer. When greengrocer had plastic bags I used those.
