Fish van Wednesday, so we had shell on prawns and crab meat salad plus a crusty sourdough baguette from Waitrose. Plus a glass, sitting out side on a warm evening. Followed by, here comes the cooking bit, nectarines and amaretto - didn't have peaches, nor cream so used yoghurt instead. Was given a kiss for a lovely meal.

Last night was a gorgeous fresh salad I made with giant (Israel) couscous -loads of herbs from the garden, Dijon/lemon vinaigrette. chopped tomatoes & red peppers plus red onion run through it - with sumac roasted chicken legs - voila...…..summer on a plate!

I have to confess I've never made quesadillas, even though I've done loads of Mexican dishes over the years. On my to do list.

Quesadillas are also very lovely filled with squash blossoms & Oaxaca Mexican cheese, a stringy
Mexican cheese produced by " pasta filata " method, which is stretching the curds.
I also like Quesadillas filled with wild mushrooms .. Truly wonderful too.
There are 2 types of Quesadillas, called tortillas, the corn (Mexican Aztec ) and / or the wheat (Tex Mex).
All very readily available in Latin American departments of major supermarkets and
family of Latin American origins, owned groceries.
Quesadillas are also very lovely filled with squash blossoms & Oaxaca Mexican cheese, a stringy

If you can find Mexican corn tortillas, then making a quesadilla is pretty straightforward.
Put a tortilla on a hot plate or grill ( or in a frying pan) with almost no oil.
Cover the tortilla with what ever you want to fill it with; cheese, mushrooms, huitlacoche, or pulled pork/chicken/meat, top with another tortilla .
Cook on one side, flip over, cook on the other side, cut in half, serve with salsa roja or salsa verde.
¡ Órale!

We do double portions of everything and either have it for lunch the following day, or freeze for much later.
It's lovely coming across a home-made 'ready meal' of (say) lasagne, curry, a few quesadillas when you have been unable to shop or were away from home and the fridge is empty.

Gill, you are right.
For so many months I was very ill, in constant bone pain and unable to do anything; even showering was an enormous effort. Housework, driving, shopping and my beloved cooking were out of the question.
I am so grateful and in awe of modern medicine as my situation is totally reversed and I am 90% restored to normality. Planning and being able to stand up cooking a nice evening meal for us is a joy.
For so many months I was very ill, in constant bone pain and unable to do anything; even showering was an enormous effort. Housework, driving, shopping and my beloved cooking were out of the question.
I am so grateful and in awe of modern medicine as my situation is totally reversed and I am 90% restored to normality. Planning and being able to stand up cooking a nice evening meal for us is a joy.

Our no effort, CBA meal is fish fingers, Binky.
Usually after we've been to the cinema, and fancy a quick trip to the pub afterwards.
I love the way bought breaded fish, or fish fingers grill so quickly.

I made lunch today. This was a wrap filled with hot crumbled felafel, salad, guacamole and tomatoes. Side dish of waldorf salad as we had an apple to use up. Sat in the garden and had a cup of tea afterwards. Delish!

Binky, I’m so pleased to hear about your improvement, we know how brilliant some of the medical staff are, glad the same happened to you. I’m sure hubby feels the same.
A local farm shop does frozen giant fish fingers - one each is enough for us and can be cooked from frozen. Nice not having to rely on memory to defrost!

Reactions to 'fish van Wednesday' made me smile.
Today is '20% off fish Friday' in Waitrose - makes salmon affordable. Noticed their Alaskan fresh salmon was 25% off, making it cheaper than the Scottish farmed variety. But was that because it was close to sell by date.? Didn't like to risk it.
