First day of Veganuary ! Breakfast was porridge made with Alpro coconut milk , apple and a dollop of peanut butter. For lunch I had a Thai stir fry mix with lots of sweet chilli sauce added and edamame beans . For dinner I tried M&S vegan Mac and cheese bites which were really good , along with homemade oven chips , salad , pickles and mustard .

Why don't you start up a "Veganuary Month" thread, documenting your journey...

I've hankered after this Bratwurst with Red Cabbage cooked in cider since before Christmas, finally got round to doing the deed. All in all, with the Uszka Borscht I "made" earlier, it's been a very purply day foodwise.

What a lovely meal Sakkarin! Now I have a hankering for red cabbage braised in cider!

Yip! Very nice.
No idea what we are having tonight. There's nothing in the fridge, and we are out and about all day. So nothing elaborate.

Yesterday we used up some BBQ meat to make a ragú. I wouldn´t touch it with a bargepole, but my son and the rest of the family loved it!!
Today I´ve been asked to do an Indian meal - a combined dinner/food course.
I´m going to make a Tikka Masala, some shrimp with coconut milk, bhutta (sweetcorn with aromatic spices), Bazaar Potatoes and a pineapple curry.

Curry here today, Salmon Kalia, which uses onion, tomatoes and a lot of spices, luckily all cupboard ones I have. It looks easily enough, here: (video 8.22 mins)

Got some giant pak choi that I'll blanch to go with it. Boy it's big, after being used to baby pak choi, but very good value for money by comparison.

Also I've finally fished out a bottle of jeera water unopened from the cupboard, which I gather is added to rice, so that'll be a first for me.

Jeera or kewra water?

The salmon curry looks interesting, I have some to use up in the freezer, maybe make it a fish Friday.

Oops, silly me, yes kewra water. Well I got the "ra" right :D

Our local chippy closed down late October. Not surprised given the huge hike in price and fewer opening hours. A new one has been fitted out since but is still "Opening Soon". No idea what the hold up is. Still, the curry ought to fridge keep for three days, or freeze, if some of the salmon is left more lightly cooked to allow for 5min m/w reheat.

We had veggie haggis, neeps and fatties last night, it was great.
Tonight is freezer tea, mini kievs, waffles and beans.
Tomorrow, either homemade Dahl from the freezer, or a version of puttanesca with added artichokes.

One of my favourite comfort moods , waffles and Kiev’s , though I tend to go for tinned spaghetti over beans

Inspired by another thread I’ve just had liver and onions. I like the casserole version, so pigs liver with a little bacon
Served with new potatoes and cavolo nero

Long-cooked ham hock yesterday, with cabbage, carrots and mash and a gravy made with the ham stock (Heston style stock). Making the mash, I had already added a small lump of butter, but then realised that the milk mayo would probably make a complete mash making mix, with milk, oil and seasonongs.

I'll try that next time I make mash, as I have more leftover milk mayo in the fridge than I need.

Having unearthed some elderly feta from the back of the fridge, and having rainbow chard in the garden, plus half a packet of filo in the freezer...

... Guess what's for dinner...

Shepherd's Pie?

Simple smoked haddock here. I've discovered that a hint of rice vinegar works, and a good grind of black pepper.

Well I changed my mind, as I do often, so last night was a BLT on a sourdough baguette with 5 types of pickles on the side.
I then made a batch of white sauce, and another of bacon, tomato and olive sauce for the freezer.
Tonight I had Dahl and rice with some slightly wrinkly cherry tomatoes.
No idea about tomorrow.

My breakfast was Lidl fab sourdough boule with Lidl 99p gorgonzola and a bit of ham left over from my ham hock. Yum.
