I thought I'd start a thread.
Anjum's recipe from I love curry is here, for cabbage, bengal gram, and coconut:

My SIL does a cheat's recipe for coconut vegetables, usually at Christmas with the leftover veg. She just makes up a packet of curry sauce, stirs in a block of coconut cream, adds the veg and heats in the oven. It's takes minutes to make and is very tasty.

Ooh thanks for the video Gillthepainter - sounds right up my street and a bonus being vegan friendly too. I've got everything if I sub the curry leaves so can try it right away, e.g. serve it with my mushroom toad = fusion cooking at it's best
Joanbunting, if you like the idea generally, could you sub small pieces of mango for the coconut? I like mango chutney with cabbage or sprouts so that might work for you.

To be honest, I don't think Anjum's cabbage dish looks that marvellous.

That’s a Thoran - as she says South Indian dish, came with most meals in Kerala

I´ve never made that dish, but it will be in my repertoire from now on. Probably because I love Anjum Anand
Seriously, though: cabbage , south Indian style , seems to work exceedingly well for me, especially with toovar dal - there´s a creaminess to the dal which offsets the slight bitterness of the cabbage.
I think I´d toast the coconut a bit before adding the cabbage, but that´s just me.
I make something called Blue Mountain stew - fry onions, cabbage and ginger ( with about 3 or 4 green chiles), then add the cooked toovar dal, some fresh tomatoes and a cup of water. Cook until the cabbage is just tender.

I cut a white cabbage last week and made this dish (without the peanuts) as a side. It turned out fine, went down well with Mrs B and will very likely be an option for using white cabbage from now on. I will probably give it a go with sprouts, of which there are plenty waiting to be picked.

Glad to hear it went well with the cabbage, Badgeness.
I tend to just steam veg with a main curry, so it was an improvement on my approach.
