Fried tofu
Does anyone else cook this for breakfast?
My husband got fed up with eating eggs in all their guises when he came home from swimming each morning, so now he lightly fries slices of tofu and makes a fresh salsa to go with this. Tastes delish I must say.
Any other ideas for a cooked tofu breakfast?

Scrambled tofu (with or without toast) is a favourite breakfast/brunch ... something along these lines https://greatist.com/eat/recipes/10-min ... mbled-tofu ... sometimes with some bits of broccoli/chard from supper stirred in, and often with some quartered cherry tomatoes ... delicious.

It is also good with Indian type spices. We sometimes add (veggie) chorizo or chopped sausages to the mix too. It is also good with fried potatoes on the side.

What about tofu pancakes.
I really like the 2 egg + 1 banana pancakes recipe for breakfast after my personal trainer sessions.
I'd be tempted to try it blended with tofu rather than banana.
But if he's super fed up with eggs, I'd make a flour based batter.

Banana pancakes sound good (we often have a couple of over-ripe ones lurking on the banana tree).
What do you do Gill? Blitz the eggs and banana in a blender, or make a pancake batter and add sliced bananas?

Less than that.
One mushed banana first. Add 2 beaten eggs.
And fry in butter. Zat is it.

I think he's adding ground almonds, not flour.
He says 'almond meal' so I could be mistaken.
Anyway, ground almonds sound a splendid addition to me, and I shall try it asap.

Ah, I never have the sound on on my computer.
I guess peanut butter powder would work too. I must give it a try, as I have so much of it.

I love the 2 eggs and a banana whizzed in the mini-processor and the addition of peanut butter powder is a good one!

I asked "my" vegan about tofu not yet mentioned. He reckons two things.
One is braised tofu (as bought from HFS) which is fried with onion, mush, tom (on toast or English muffin) or fried to cremate it to crispy so like crispy bacon slices, with veggie/vegan sausage for a meatier-tasting combo.
The other is to use silken tofu as a protein thickener. E.g. in thin nut milk for smoothies with berries/fruit.
Firm tofu can be marinated of course (half an hour or overnight) as skewer chunks or fry strips.
Most of his pans seem to start with sauteed onions, mush, tom or coconut milk etc with other veg fancied or available in fridge, but more brunch than brekkie.
