I think creaming butter alone will at least soften it and lighten it enough to incorporate the mix evenly?

Has the sushi kit been used yet, Suffs? I find making sushi to be most relaxing. Made it for only the 2nd time in over a year a couple weeks back after sharpening my knives with my new whet stone.

Fabulous! It has turned out so well! Do you get the pickled ginger in a jar to have with it? I used to get it from Manchester Wing Yip's.

Sushi rolls have definitely got a wow factor. I was given some nori sheet a few years ago and shied away from doing anything with them for a long while. When I took the plunge it was a pleasant surprise how straightforward it was to turn out something that looked impressive. Since then they've been a regular nibble here.

I generally make veggie ones as they can be eaten by pretty much everyone - vegan, dairy intolerant, coeliac. The only issue potentially in the last case is to make sure the soy sauce used is gluten free (it had never occurred to me that it might not be, I once had a similar surprise about baking powder).

I quite like using ume shiso in place of vinegar. It's made from plums and flavoured with the herb Perilla. My little bottle had run out and I have been struggling to find a replacement, but we were in Kensington a couple of weeks ago, chanced upon the impressive Whole Foods Market, and I found a big bottle, so there will be more sushi made here soon enough. :D

I use clearspring's Ume Shiso quite a lot in salad dressings & marinades or just straight on vegetables - I like its tart, tangy flavour, also the umeboshi paste, both easy to find online when you've used up that big bottle!

It's the Clearspring one I've used, the local health food shop sold it in the past but I haven't seen it there recently nor in the Japanese section of the local supermarkets. I expect the local place would order it for me as well if I asked nicely. I quite like the idea of an excuse to go back to WFM though...

I never get chance to head over to Wing Yip. Is it the one in Ancoats? I tend to order my things online.

Yes, Wing Yip is in Ancoats, well worth a visit. There used to be a couple of nice Vietnamese cafes on the other side of Oldham Road, I assume they're still there. There is also WH Lung on Upper Brook Street near the University. It isn't as big as Wing Yip but still has a decent selection of stuff.

Yes, I suppose it is that one. When I worked in Oldham, I used to drive into Manchester to the bank three times a week so often called in. I do miss it, although I used to spend too much!
