I've just bought a Global knife. I bought a spatula from Steamer Trading, which resulted in them sending me a lot of emails. I read one about a sale, including apparently big savings on Global knives. I Googled them and it did indeed seem that they were on offer for much less than it would cost to buy them elsewhere online. Thus I'm now the proud owner of a 27cm cook's knife. It is truly sharp enough to shave with. Mrs B is certain I'm going to lose fingers. :shock:

Amazon, Ikea and Lidl have sushi making kits of all types and all budgets ..

What a fantastic kit from the Japan Centre, Sue and it can be wrapped with the Furoshiki Gift Wrap. I've ordered a lot from there in the past.

Thanks so much everyone for all your ideas and suggestions.

I've ordered the kit StokeySue flagged up from the Japan Centre, along with the book Sushi - the Beginner's Guide .... they'll have to live in the bottom of my wardrobe until the big day ... his birthday is a few days before Christmas so not sure when he'll get it ... depends what else I get for him and where we're going to spend Christmas.

A great idea Uschi and a bottle of Sake, warmed slightly in a saucepan of hot water. That's the way that the Japanese do it.

You definitely don't need a kit, but depending on where you order from, may find it more expensive to buy the various items individually than in a kit designed as a gift. Sous Chef have both a smaller bundle and a "deluxe" bundle and they also sell items individually, such as the rice barrel, not needed but a nice extra for those serious about it!

A beautifully wrapped kit has arrived and is in my wardrobe Shhhhhhhhhhhhh!!!!!!!!

If he enjoys the sushi making I can see lots of supplies being ordered online in the future. :crossed

And of course he has access to some very nice Japanese knives ;)

Ha, you share your knives.
Tony won't touch mine .... too sharp for him.
I bought him a ceramic knife some years ago. But it looks a bit "serrated" now.

He needs a new one for his fruit.

An excellent perk.
I saw on the pans thread about the job, but sorry, didn't quite connect the 2.

It would be nice to pick up a knife and know that someone else is doing the sharpening for me.
Which reminds me, I must start and soak my whetstone. A wee job this morning, do my knives.

I did mine yesterday ... I cheat and use an electric sharpener that Ianinfrance recommended.

I wish I could remember not to cut raw pastry shapes out with newly sharpened knives ... my silicone pastry rolling mat is full of slits :roll:

I use an electric sharpener too, never got the hang of using a steel (though oddly enough I can use a whet stone to sharpen a scalpel or penknife)

I had 3 good knives professionally reground recently, including an inherited Henckel that would cost well over £100 to replace so worth the £37 it cost for all three

Anyway, the knife guys approve the use of electric sharpeners, though they do give coaching in using a steel

And if you get bored with Japanesey sushi, you can always try some Korean ones, which are a bit more meaty! Here's some I made earlier...

Had a walk around town earlier and I see that a Yo Sushi is getting set to open here in 4 days' time, you could see the staff practising inside, hordes of them!

Those do look good!

I was very interested in the sweet potato noodles, which I had never come across. I have just … at long last, ordered a spiraliser, so will be able to make my own. It is one that will handle hard vegetables.

Ha! The Korean sweet potato noodles are not that sort of noodle, they're dried noodles made from sweet potato starch, similar to Chinese bean thread noodles but thicker.

Goodluck with the spiraliser, I'm afraid mine is lying unloved in a cupboard :-(

It is not one of those posh electric ones though.

And yes, I can see less rice now you mention it.

I'd never have thought of going to Korean cuisine for the sushi making. Nice touch.
