Cherries pair lovely with Sparkling Wine ( Champagne, Prosecco or Cava ) ..

Sparkling wines differ so much I couldnt make a generic pairing ... but a true brut-style champagne with buttery lobster ... that’s a match made in heaven

Beef skirt slow cooked in a rendang curry with coconut milk

Skirt of beef marinaded in garlic, FRESH GINGER, soy and lemon juice, and grilled very rare. Sliced across the grain on a green salad.

Grated lemongrass in the paste made for prawn toasts served with slithers of spring onions.

Pommes sarladaises with an egg sunny side up plonked atop a rocket, orange and feta cheese salad.
I accidentally discovered pommes sarladaises (except no duck fat for moi) by doing them t'other way round, i.e. microwaving spud coins in a drop of water and oil till soft then spread in a frying pan to crisp up the bottoms with a touch more oil, or, which is now a fave method, finished in same pan as a frying white fish fillet, or swordfish (slightly garlicky) steak.
Google shows orange with firm white fish recipes, which I didn't expect to find. Dunno if I fancy that, even with ginger/honey also, as I'd more associate that combo with salmon.

Jeral, not using dusk fat means they are not pommes sarladaise you are making but rather more pommes Anna or even Panackerty - though to be authentic that would use beef dripping.
