Spanish Judions are called Judions…….you need to check the books you read as opposed to just reading recipes from those books...

Judions or large /gigante butter beans are grown in many countries especially Greece where the quality can be very superior, and are not the same bean as Pochas at all.

Reggiano Parmigiani Cheese ( Parmesan ) is a lovely touch to a wonderful simple fresh tomato sauce drizzled over a pasta of choice.

Also wonderful finely shaved and placed over Rocket field greens ..

So many various squashes.

I Will go with Zucchine or Courgette Flowers simply prepared by sautée-ing in Evoo with a pinch of Sea Salt or Himalayan Salt.

Courgette or Zucchine ( we do not have mentioned squash as a sustainable crop here ) as an ingredient in a Provençal Ratatouille or a Pisto Manchego.

Are we still on roasted crown prince squash then since courgettes are nothing like the huge pumpkin? If so, blue cheese.

Jeral,

We import pumpkins for Halloween however, it is not fancied here except in North American Expat Communities.

Calabaza, is an African, Latin American type of squash used in Soups predominately.

However, we are not a grand culture of squashes except for Courgette or Zucchine ..

Eating chilli crab outside a beach restaurant on a hot night in Singapore with steamed buns to mop up the sauce that's mostly all over one's face :yum lovely memories!

Comparing a Crown Prince Squash to an ordinary pumpkin is like saying paste jewellery can be mistaken for high quality diamonds...…………...
