Vanilla is in many things, though please not as some fashionable chefs think with fish (yes, I have tried it, and please, no)

However vanilla ice cream is just one of the best things in the world

as we seemed to have skipped over jeral's suggestion i'm pulling it down for an amalgamation in this recipe which uses oregano.

Red kidneys soaking as I type to turn into a chilli later in the week - always keep a few back to go with a red cabbage salad.

red wine vinegar in -

Red onion marmalade

Ingredients
2 large red onions (about 550g) thinly sliced
120g brown sugar
125 ml red wine vinegar
50ml (about 3 tbsp) balsamic vinegar
salt and freshly ground pepper
Method
In a large, non reactive saucepan, combine the red onions and 2 tablespoons of the brown sugar and cook over moderate heat for about 25 mins or until the onions begin to caramelise.
Stir in the vinegar and the rest of the sugar, increase the heat and stir often, until most of the liquid has evaporated, about 15 minutes.

Season to taste with salt and pepper and pot in sterilised jars.
Keeps for 3 months.

I love tamarind, I use it a lot especially with chickpeas or prawns in curries, but those are ingredients we’ve had a few times on this d.

Tamarind is also an ingredient in a surprising number of British condiments including HP Sauce
